- 1 cup Milk

- 2-1/2 teaspoons Active Dry Yeast

- 1/3 cup Sugar
- 3-1/2 cups All-purpose Flour
- 1 teaspoon Salt
- 1/3 cup Sugar
- 2 Tablespoons Cinnamon

Cinnamon-Chocolate Fudge

1. Butter the bottom and sides of an 8 by 8-inch baking pan
- Butter, for greasing the pan
- 1 (14-ounce) can sweetened condensed milk
- 2 teaspoons ground cinnamon
- 1 teaspoon pure vanilla extract
- 1 pound (about 2 cups) bittersweet (60 percent cacao) chocolate chips (recommended: Ghiradelli) see Cook's Note
- 3 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature

- Butter, for greasing the pan
- Powdered sugar, for dusting
- 1/2 cup water, plus 1/4 cup
- 3 tablespoons (3 packets) unflavored gelatin
- 2 cups sugar
- 1/2 cup evaporated milk
- 1 large orange, zested
- 1 teaspoon pure vanilla extract
- Orange decorating sugar*

Breakfast Popovers with Italian Sausage

1. Place an oven rack in the center of the oven and preheat to 400 degrees F
- Butter, for greasing the pan
- 2 tablespoons extra-virgin olive oil
- Two 3-to-4-ounce sweet or spicy Italian sausage links, casings removed
- 2 cloves garlic, minced
- 1 cup shredded smoked mozzarella (4 ounces)
- 4 large eggs, at room temperature
- 2 cups milk, at room temperature
- 1-1/2 cups all-purpose flour
- 2 small green onions, pale green and white parts only, finely sliced to yield 1/4 cup
- 3 tablespoons chopped fresh basil
- 1-1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- Maple syrup, for drizzling
Smoked Pork & Collard Green Gumbo

1. Wash greens until all sand and grit are washed out
- 3 bunches collard greens, washed
- 4 tablespoons butter
- 2 cups onions, diced
- 1 cup celery, diced
- 1 cup bell pepper, diced
- 1/4 cup garlic, minced

- 2 cups canola oil
- 4 quarts chicken or pork stock
- 1 pound smoked pork butt, pulled
- 1 pound smoked andouille sausage, sliced
- 1 pound boiled ham, diced

Onion-Bacon Dip

- 1 large leek
- 6 bacon slices
- 1 large sweet onion, minced
- 8 ounces cream cheese, softened
- 1 cup sour cream
- 1/2 teaspoon salt
- 1 acorn squash
- Assorted multigrain and vegetable chips
- Garnish: chopped fresh chives
Spicy Mint Beef

1. In a large skillet, heat the oil over medium-high heat
- 3 tablespoons vegetable or canola oil
- 4 cloves garlic, minced
- 3 Thai chiles, such as prik kee noo, or 3 serrano chiles, stemmed and thinly sliced
- 1 pound flank steak, very thinly sliced
- 3 shallots, thinly sliced
- 1 red bell pepper, stemmed, cored, seeded and cut into 1/8-inch thick slices
- 1/4 cup fish sauce
- 2 tablespoons sweet soy sauce
- 2 tablespoons black soy sauce
- 1 tablespoon chili paste in soy bean oil
- 1-1/2 cups chopped fresh Thai basil leaves
- 1 cup whole fresh mint leaves
