Lo Mein

Sauce: Shake all the sauce ingredients together in a jar
- Sauce:
- 2 tablespoons dark soy sauce (sub regular soy sauce if needed)
- 1 tablespoon light soy sauce (sub regular soy sauce if needed)
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- Lo Mein:
- 4–6 ounces uncooked ramen noodles
- 1 tablespoon sesame oil
- 3 green onions, chopped (separate green parts from white parts – you’ll use both separately)
- 2–3 cups julienne cut or chopped vegetables like carrots, red peppers, cabbage, bok choy, mushrooms, or broccoli
- 1–2 tablespoons mirin
Mexican Quinoa and Rice

In a large sauté pan with a lid, or a dutch oven, add a tablespoon of olive oil, and heat over medium high heat
- 1 1/2 cups Floating Leaf Sprouted Brown Rice, Split Pea and Quinoa*
- 3 cups vegetable broth
- 1 15 ounce can crushed tomatoes
- 1 15 ounce can kidney beans rinsed and drained
- 1 ear corn kernels cut off cob, or sub 1 cup frozen
- 1 tablespoon chili powder *or less, depending on how spicy chili powder is
- 1 tablespoon cumin
- 1 teaspoon sea salt or more, to taste
- 1 teaspoon Mexican oregano
- 1 cup cheddar cheese shredded

- 2 chicken breast, cut into bite sized chunks
- ½ lime, juice only. About 1 tbsp
- 60 ml low sodium soy sauce, ¼ cup
- 1 tablespoon canola oil
- 1 tablespoon fresh ginger, minced or grated
- 1 clove garlic, minced or grated
- 2 green onions, chopped
- 2 tablespoon jerk seasoning, see below
- 30 ml pineapple juice, 2 tbsp
- 1 tablespoon butter
- Quinoa
- 2 cloves garlic, minced or grated
- 1 teaspoon jerk seasoning, see below
- ½ teaspoon ground pepper
- 85g uncooked quinoa, ½ cup
- 1 onion, small, chopped
- ½ red bell pepper, chopped
- 250 ml chicken stock, 1 cup
Jamaican Jerk Seasoning

Just mix all the spices together and store what you don't use today in an airtight container
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 3 teaspoon cayenne pepper
- 2 teaspoon smoked paprika, regular paprika if you can't find smoked

- 2 teaspoon dried parsley
- 2 teaspoon dried thyme
- 1 teaspoon allspice
- 1 teaspoon red pepper flakes

- 2 ½ cup all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
