  • 1 boneless beef pot roast (2 lb)

  • 1/2 lb carrots, cut into 2-inch pieces
  • 1 can (18 oz) Progresso Recipe Starters fire roasted tomato cooking sauce
  • Chopped fresh Italian (flat-leaf) parsley, if desired

If you are a foodie (which I’m guessing you are if you are reading this!)…then you know how significant is the ...

  • For the coating:
  • 8 ounces of chicken (I prefer with bones, but you could use boneless too if you like)
  • 1 tablespoon of oil
  • 2-3 fresh green chilies- chopped up
  • 1 tablespoon butter (softened or melted)
  • 1/2 an onion- chopped up
  • 1-2 tablespoons of flour
  • 1/4 cup of milk
  • 1 slice of fresh bread- to get fresh crumbs, grind this bread slice
  • 1/4 tablespoon of red chili flakes
  • 1/2 tablespoon of salt or to taste
  • 1/4 tablespoon of pepper, or just a pinch
  • 1 egg - separate
  • 2 tablespoons of egg white for coating
  • 1/4 cup of flour
  • 1 tablespoon of oil
  • 2 tablespoons of water mixed with two (2) tablespoons of the egg white that we kept separately
  • Mayonnaise (at the time of serving the dish)
