Shredded Potatoes au Gratin

I was amazed at how these turned out
- 2 cups (1/2 lb) refrigerated shredded hash-brown potatoes or
- 2 cups frozen hash browns potatoes, thawed
- 1 cup whipping cream
- 3/4 cup shredded Cheddar cheese, divided
- 1/8 cup sliced green onions (about 2 medium)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt

- Southwestern Butter:
- 6 T. butter, slightly softened
- 1/4 teaspoon cumin
- 1/4 teaspoon dried oregano leaves
- 1/4 teaspoon chili powder
- 1/8 teaspoon dried thyme leaves
- 1/8 teaspoon pepper
- 1 Dash ground red pepper (cayenne)

- Steak:
- 1 Tablespoons butter, melted
- 1 lb. boneless beef sirloin (1 to 1 1/2 inches thick)
- 2 teaspoon blackened steak seasoning
Dry Cream of Soup Mix - Substitute

"A Cream soup mix that can easily be made dairy-free
- MIX:
- 1 cup non-fat powdered milk ( or replace with soy milk powder for a dairy free option.)
- 1 tablespoon onion flakes
- 2 tablespoons cornstarch
- 2 tablespoons chicken bouillon
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
Pizza Quesadillas

Heat a medium skillet over medium heat and fry the pepperoni until crisp
- 8 flour tortillas
- 8 ounces of shredded mozzarella cheese
- 6 ounces sliced pepperoni
- 1 (16-ounce) jar of pizza sauce
- Butter or oil for pan
Butternut Squash Soup ♥

"This deep golden soup is as pretty as it is yummy
- 3 pounds unpeeled butternut squash, halved and seeded
- 2 large unpeeled onions
- 1 small whole garlic bulb (not just a clove)
- 1/4 cup olive oil or vegetable oil
- 2 tsp dried thyme
- 3-3 1/2 cups chicken broth
- 1/2 cup whipping cream
- 3 Tbsp minced, fresh parsley
- 1/2 tsp salt
- 1/4 tsp pepper

- NOTE: I leave the seeds in because they are easier to remove after cooking.

Glazed Ham Steak with Maple Mustard
