Gumbo Biscuit Bake

Cobbler meets gumbo in this savory, satisfying dish
- Biscuits:
- 2 tablespoons vegetable oil
- 1 medium onion, diced
- 3-4 celery stalks, sliced
- 1 large green pepper, diced
- 1 pound smoked sausage (e.g., kielbasa), sliced
- 1 teaspoon salt
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- 1/2-1 teaspoon cayenne pepper, to taste
- 2 cans (14.5 ounces each) diced tomatoes
- 3 cups chicken broth
- 1/4 cup unbleached all-purpose flour
- ..........................................
- 3 3/4 cups King Arthur Unbleached Self-Rising Flour
- 1/4 cup Herb and Garlic Artisan Bread Flavor; or substitute 1/4 cup self-rising flour
- 1/2 cup (8 tablespoons) cold unsalted butter, diced
- 1 1/3 cups cold milk
Pork Lo Mein

“Go no farther than your stove-top for a fresh-tasting dish of stir-fried pork, vegetables and noodles
- 10 oz. linguine
- 1 tbsp. sesame oil
- 1 cup chicken broth
- 1/4 cup oyster sauce
- 1 tbsp. cornstarch
- 1 tbsp. olive oil
- 4 cups shredded napa cabbage (about1/2 medium head)
- 2 medium carrots (cut into matchstick-size pieces)
- 1 cup snow peas (about 4 oz.)
- 2 tsp. soy sauce, divided
- 1/2 lb. pork tenderloin, cut into 2- x 1/2-inch strips
- 4 cloves garlic, chopped
PASTA SALAD

Cook pasta according to package directions, drain
- 1 1/2 c mostaccioli pastaa
- 1 C chopped celery
- 1 C sliced red onion rings
- 1 C bite-size green pepper pieces
- 1 C pitted ripe olives
- 1 C broccoli flowerettes
- 1 jar (4 oz) pimiento pieces, drained
- 1 can (16 oz) garbanzo or kidney beams, drained
- 1 envelope dry Italian salad dressing mix
- 1/2 C sugaar
- 1/2 C salad oil
- 1/2 C vinegar
Crumb Coffee Cake (uses Pound Cake Mix)

Preheat oven to 350 degrees
- CRUMB COFFEE CAKE
- 1/4 cup plus 2/3 cup packed light brown sugar, divided use
- 3/4 tsp. ground cinnamon, divided use
- 1 (16 oz.) pkg. pound cake mix (prefer Betty Crocker’s)
- 2 eggs
- 1/2 cup milk
- 1/2 cup sour cream
- 1 teaspoon grated lemon zest
- 1/4 teaspoon ground nutmeg
- 2 cups all-purpose flour
- 2/3 cup butter or margarine, melted
- 1 Tablespoon powdered sugar
Apple Pie

1) Heat oven to 425°F. Place 1 pie crust in ungreased 9-inch glass pie plate
- CRUST
- 1 box Pillsbury refrigerated pie crusts, softened as directed on box
- FILLING
- 6 cups thinly sliced, peeled apples (6 medium)
- 3/4 cup sugar
- 2 tablespoons all-purpose flour
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1 tablespoon lemon juice

This easy, quick-to-fix recipe has long been a staple at my house because it tastes so good
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 to 2 teaspoons butter
- 1/2 pound smoked kielbasa or Polish sausage, cut into
- 1/2-inch slices
- 1/2 small head cabbage, coarsely chopped (about 3 cups)
- 2 carrots, pared and slice on the diaginally thinly.
- 1/4 cup Chicken Broth or water
- Salt to taste, optional
- Pepper to taste

- 7 oz Ketchup
- 1/2 cup water
- 1 Tbs cider vinegar
