Maple Syrup Spice Cake

“We ran to Grandma's house after school for a piece of this cake and a glass of milk
- 2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon each salt, ground cloves and nutmeg
- 1 1/4 cups firmly packed light brown sugar
- 8 tablespoons (1 stick) butter or shortening, softened
- 3 large eggs, separated
- 1/2 cup half-and-half
- 1/4 cup maple syrup
- 1 cup whipped cream
- Ground nutmeg, optional
Double Dark Chocolate Biscotti

1. To prepare the biscotti, preheat the oven to 350 degrees F
- Biscotti:
- 1 1/2 cups flour
- 1/2 cup brown sugar
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp. baking powder
- 1/4 tsp. ground cinnamon
- 1/8 tsp. salt
- 1 large egg
- 2 large egg whites, beaten
- 1/4 cup trans-free margarine, melted
