- 1 can (14.5 oz each) Hunt's Fire Roasted Diced Tomatoes with Garlic, undrained
- 1/2 teaspoon dried rosemary
- 1/8 teaspoon crushed red pepper flakes
- 4 small red-skinned potatoes, each cut into 8 pieces
- 4 boneless chicken thighs (4 thighs = 1 lb)
- 1 tablespoon butter
- 1/8 teaspoon coarse ground black pepper
Autumn Pot Roast

This is one of my all time favorite slow-cooker recipes
- 1 boneless beef chuck roast (3 pounds)
- 1 teaspoon salt, divided
- 1/2 teaspoon pepper, divided
- 1 tablespoon olive oil
- 1 1/2 pounds sweet potatoes, cut into 1-inch pieces
- 2 medium parsnips, cut into 1/2 inch pieces
- 1 large sweet onion, cut into chunks
- 1/3 cup sun-dried tomatoes (not packed in oil)
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 can (14-1/2 ounces) reduced-sodium beef broth
- 3/4 cup dry red wine or additional reduced-sodium beef broth
Jack's Strawberry Jam Bread

Jack really liked this bread! Recipe can be cut in half to make just one loaf
- 1 cup butter, softened
- 1 1/2 cups sugar
- 1 tsp. vanilla
- 1/4 tsp. lemon extract
- 4 large eggs
- 3 cups flour
- 1 tsp. salt
- 1 tsp. cream of tartar
- 1/2 tsp. soda
- 1 cup strawberry jam
- 1/2 cup sour cream
- 1 cup chopped walnuts

- 1 (3 to 4 lb) chuck roast
- 1 medium onion, halved and sliced 1/4" inch thick
- 4 - 6 garlic cloves, crushed and coarsely chopped

- 1/4 cup red wine
- 1/2 cup beef broth

Look for Jamaican jerk seasoning in your supermarket's spice aisle
- 16 oz. red salsa of your choice
- 1 cup fresh pineapple, medium dice (reserve 1/4 cup)
- 1 cup scallions, cut on angle (reserve 1/4 cup)
- 1/2 t fresh lemon juice
- 1/2 t fresh lime juice
- 1/2 t Kosher salt
- 1/4 t Texas Pete or Frank's or similar hot sauce
- 4 6 oz. boneless skinless chicken breasts
- 2 T dry Caribbean jerk seasoning
