Position rack in lower third of oven; preheat to 450°F
- 2 tablespoons whole-grain or Dijon mustard
- 2 tablespoons chopped fresh thyme or 2 teaspoons dried
- 2 tablespoons extra-virgin olive oil, divided
- 1/2 teaspoon salt, divided
- 1/2 teaspoon freshly ground pepper, divided
- 1 1/2-2 pounds bone-in chicken thighs, skin removed
- 2 medium sweet potatoes, peeled and cut into 1-inch pieces
- 1 large red onion, cut into 1-inch wedges
Buffalo Chicken Grilled Cheese Sandwich

I love buffalo wings. And, I love grilled cheese
- 8 slices French bread, sliced 1/2" thick
- 6 oz cream cheese
- 1 cup Cheddar cheese, shredded
- 3/4 cup blue cheese, crumbled
- 2 cups cooked chicken, shredded
- 1/4 cup mayonnaise
- 1/8 cup onion, minced
- 1/4 cup celery, minced
- 5 Tbsp buffalo wing sauce
- Soft butter or margarine

- 2 1/2 cups all-purpose flour
- 1 teaspoon granulated sugar
- 1 teaspoon salt
- 1/2 cup butter, unsalted, chilled, cut into pieces

Heavenly Mashed Potatoes

Preheat oven to 350 degrees
- 3 1/2 lbs. potatoes, peeled and quartered
- 1 8 oz. package cream cheese, cut up and softened
- 1 8 oz. carton dairy sour cream
- 2 tsp. yellow mustard
- 3/4 tsp. salt
- 1/2 tsp. ground black pepper
- 4 slices bacon, crisp-cooked, drained, and crumbled
- snipped chives (optional)
Pepperoni Stromboli

Place each loaf of bread dough in a greased large bowl, turning once to grease top
- 2 loaves (1 pound each) frozen bread dough, thawed
- 2 eggs, lightly beaten
- 1/3 cup olive oil
- 1/2 teaspoon each garlic powder, salt and pepper
- 1/2 teaspoon ground mustard
- 1/2 teaspoon dried oregano
- 1 pound ground beef, cooked and drained
- 1 package (3-1/2 ounces) sliced pepperoni
- 2 cups (8 ounces) shredded part-skim mozzarella cheese
