  • 2 tablespoons extra virgin olive oil
  • 3 pound beef roast (chuck roast, top round, or sirloin tip roast are what I typically use)
  • 3 cloves garlic, minced
  • 1 yellow onion, diced
  • 1/2 cup apple cider vinegar
  • 6 ounce can of tomato paste
  • 1/2 cup dark molasses
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 2 tablespoons prepared mustard
  • 1-2 tablespoons dark brown sugar
  • Kosher salt
  • Freshly ground black pepper
