Oriental Coleslaw

- Dressing:
- 2 pkgs Ramen noodles, Oriental (or other flavor if you wish)
- sunflower seeds-to your liking
- approximately ¼ C. sesame seeds-to your liking
- 1 bag coleslaw mix
- 1 small bundle of green onions, chopped
- 2 pkgs Ramen noodle seasoning
- 2 Tbsp. sugar
- 3 Tbsp vinegar
- 1/2 ½ C. vegetable oil (or a little less is okay)
- 1 Tbsp soy sauce
Butterscotch Bread/Cake

Preheat oven to 375. Grease bundt pan
- 11 oz pkg butterscotch chips
- 3/4 ¾ C. (2 medium) mashed bananas
- 1 pkg yellow cake mix
- 1/2 ½ C. vegetable oil
- 4 large eggs
- 1/4 ¼ C. water
- 1/4 ¼ C. sugar
Snickerdoodle Muffins

- 2 sticks unsalted butter
- 1 cup sugar
- 2 tsp vanilla
- 2 eggs
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 3/4 tsp cream of tartar
- 3/4 tsp freshly grated nutmeg
- 1 1/4 cup sour cream
- 2 1/4 cups all purpose flour
- 1/2 cup sugar and 1 TBSP cinnamon mixed together for rolling*
Chocolate Kahula Cake/Bread

Preheat oven to 350. Mix ingredients together and divide into 3 foil pans (8x3 ¾ x2 ½ )
- Glaze:
- 1 pkg chocolate cake mix
- 1 large box instant chocolate pudding mix
- 4 eggs
- 1/2 ½ C. oil
- 1/2 ½ C. water
- 1/2 ½ C. Kahlua
- 1/2 ½ stick butter (4 T)
- 1/2 ½ C. Kahlua
- 1/2 ½ C. sugar
- Heat all ingredients until boiling, then turn down and cook 2-3 minutes. Pour glaze over warm cake.
Butter Pecan Rum Cake

Spray and flour bundt pan
- 1 Box butter pecan cake mix
- 1/4 ¼ C. butter, softened
- 1 small box instant vanilla pudding
- 1/4 ¼ C. dark rum or 2 tsp. imitation rum extract
- 3/4 ¾ C. water
- 1/2 ½ C. Betty Crocker rich and creamy vanilla frosting
- 1/3 C. sour cream
- 2 tsp. dark rum or ½ tsp. imitation rum extract
- 1/4 ¼ C. chopped pecans
Cornbread-best ever

- 1 C. sugar
- 1 c. margarine
- 1 1/2 C. flour
- 1 C. cornmeal
- 2 tsp. baking powder
- 2 tsp. salt
- 2 beaten eggs
- 1 1/2 C. milk
Lemon Squares w/Nilla Wafers

Bake 25 to 28 minutes or until center is set
- Crust:
- 20 Reduced Fat Nilla Wafers, finely crushed
- 1/2 ½ C flour
- 1/4 ¼ C. brown sugar
- 1/4 ¼ C. cold margarine
- Combine wafer, flour, brown sugar and cut in cold margarine until it resembles coarse crumbles. Press firmly in bottom of 8 inch square pan lined with foil (extend foil over sides of pan). Bake 15 minutes.
- Beat:
- 8 oz cream cheese
- 1 C. sugar
- Add in 2 eggs and 2 Tbl. four, beat well.
- Blend in:
- 1 Tbl. lemon peel
- 1/4 ¼ C. fresh lemon juice
- 1/4 ¼ tsp. baking powder
- Pour over crust.
Rippled Coffecake

Icing: 2 C. powdered sugar, ¼ C
- 1 yellow cake mix
- 1 C. sour cream
- 4 eggs
- 2/3 C. oil
- 1 C. packed brown sugar
- 1 T. cinnamon
Chile Verde

Brown pork and drain. Add onion & chicken broth (will not cover meat)
- 2 lbs. pork, diced (I used boneless pork ribs)
- 1 c. onion, chopped
- 14 oz. chicken broth
- 1 1/2 tsp. garlic powder
- 2 1/2 Tbsp. chicken stock
- 1 tsp. celery salt
- 1 Tbsp. cornstarch
- 1/2 tsp. oregano
- 1 Tbsp. cumin
- 1/2 Tbsp. jalapeno
- 4 Tbsp. chopped cilantro
- 1/2 Tbsp. chili powder
- 1 Tbsp. green Tabasco sauce
- 10 oz. green enchilada sauce
- 27 oz. canned green chiles, chopped or diced
- 8 oz. canned green chiles, pureed
- 1-2 cans white beans, drained and rinsed (optional)
- 1/2 tsp. salt
Hot Chicken Sandwiches

Mix well. Heat and serve on buns
- Saute in 2 T.:
- 6 cups cooked diced meat - chicken or turkey (around 9 cups fills a crockpot)
- 1 cup chopped celery
- 1/2 cups chopped onion
- Combine chicken, celery and onion in crockpot.
- Add:
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 cup real mayo
- 1 cup shredded cheddar cheese
- 1 cup mozzarella cheese - may use Swiss or pepperjack
