Cream of Wild Rice Soup

I used to make this soup on the evening when we would pick out our Christmas tree
- Ingredients
- 1 package (6 ounces) long grain and wild rice mix
- 1 cup chopped onion
- 4-1/2 teaspoons butter
- 4-1/2 teaspoons all-purpose flour
- 1/2 teaspoon ground mace
- Pinch white pepper
- 3 cans (14-1/2 ounces each) chicken broth
- 2 cups half-and-half cream
- 1/2 cup white wine or additional chicken broth

- FAVORITE ICING:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 teaspoons baking soda

- 1 cup brewed coffee
- 1 cup milk

Bean Tostadas with Corn Salsa and Avocado

- 4 masll (6") corn tortillas
- 1 (15 1/2oz) can pinto or black beans, rinsed and
- drained
- 1 c. fresh salsa
- 1 (8oz) can low-sodium corn kernels, drained
- 3/4 c. chredded reduced-fat sharp cheddar cheese
- 1 . shredded romaine lettuce
- 1/2 avocado, diced
- 1/2 c. fat-free sour cream
- 2 scallions, thinly sliced
- 2 tbsp chopped cilantro (opt)
Fish

- Bread crumbs:
- Fish (Cod, Haddock, Halibut)
- 4 slices bread (torn pieces)
- 1/4 t. salt
- 1/4 t. pepper
- 2 T. butter
- Pulse 8 sec. in food processor for coarse crumbs.
- Bake 15 min in 350 degree oven. Cool 10 minutes.
- Increase oven to 450 degrees. Add shallotw to bread crumbs and 2 T. minced parsley. Toss.
- Batter:
- 2 eggs
- 3 T. mayonnaise
- 2 t. horseradish
- 1/2 t. paprika
- 1/4 t. cayenne
- 1/4 t. black pepper
- Whisk. Add 5 T. flour to batter.
- Pat fish dry.
- Coat fish with flour. Pat off. Coat with batter. Cover all. Coat (pat on) crumbs to fish.
- Bake 18-22 minutes at 450 degrees.
Roasted Red New Potatoes with Sweet Paprika Butter and Parsley

Preheat oven to 400 degrees
- 3 # small red new potatoes
- 1 tbsp extra-virgin olive oil
- 1/4 c (1/2 stick) butter
- 2 tsp sweet paprika
- 1/4 c parsley leaves, chopped
- Salt and freshly ground balck pepper to taste
