Chicken with Scallion-Lime Sauce and Sweet Carrot Rice

Sweet and simply delicious,k this dish is a real mild-child, for nights when you feel less than wild
- 4 Tbls EVOO
- 3 large carrots, peeled and grated
- Salt and black pepper
- 1 1/2 c. white rice
- 3 c. chicken stock
- 1 teas. dried thyme 1/3 palmful
- Zest and juice of 2 limes
- 4 bonelss, skinless chicken breasts
- 3 large garlic cloves, chopped
- 1/2 teas. ground coriander, 1/3 palmful
- 3 bunches of scallions, about 15, roots trimmed, sliced
- 1/4 c. fresh flat-leaf parsley, a generous handful, chopped
- 2 tbls unsalted butter
Roast Crispy Mushrooms and Grilled Tenderloin Steaks with Scallions

In France, I ahd some cepes (wild mushrooms) cooked in duck fat- yum-o! I make these mushrooms with EVOO at home
- 8 portobello mushroom caps, cut into large chunks
- 8 large garlic cloves, cracked from the skins
- 1/2 c fresh flat-leaf parseley leaves (a coupld of generous handfuls)
- 1/2 c. EVOO, plus some for drizzling
- Sea last and Coarse black pepper
- 4- 1 1/2 inch thick beef tenderloin steaks
- 8 scallions, split lengthwise
- Crusty bread
Roasted Veggie Panini

Combine zucchini, squash and mushrooms in a large bowl; toss with one teaspoon olive oil and vinegar
- 2 zucchini, thickly sliced
- 1 yellow squash, thickly sliced
- 8-oz. pkg. portabella mushrooms

- 1 t. balsamic vinegar
- 1 sweet onion, sliced

- 1 c. spinach leaves
- 2 roma tomatoes, sliced

\swedish Meatballs

These heavenly meatballs are melt-in- your-mouth tender, soft and light
- Nonstick cooking spray
- 1 slice whole-wheat bread
- 3 tblsp low-fat (1%) milk
- 3 tblsp canola oil
- 1 small onion, finely diced (about 1 c)
- 1 pound lean ground beef (90% lean or higher)
- 1 large egg, lightly beatne
- 3/4 tsp ground nutmeg
- 3/4 tsp salt
- 1/4 tsp ground allspice
- 1/4 tsp freshly ground black pepper
- 3 tblsp all-purpose flour
- 2 c. low-sodium beef broth
- 1/2 c. reduced-fat sour cream
- 2 tblsp chopped fresh parsley leaves
Carrot Coconut Muffins with Honey Butter

- Ingredients
- Canola oil cooking spray
- 1 (19-ounce) box fat-free apple cinnamon muffin mix
- 4 (4-ounce) jars pureed organic carrot baby food
- 1/4 cup apple juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 cup sweetened shredded coconut, toasted

Slow Cooker North Woods Wild Rice Soup

- 1 In 10-inch skillet, heat oil over medium heat. Cook onion in oil about 4 minutes, stirring occasionally, until tender.
- 2 Place onion, celery, carrots, turkey, wild rice, tarragon and pepper in 3 1/2- to 4-quart slow cooker. Pour broth over top.
- 3 Cover and cook on low heat setting 6 to 8 hours or until wild rice and vegetables are tender. Stir in peas last 15 minutes of cooking.
- 4 Mix milk and flour; stir into soup. Cover and cook about 20 minutes or until thickened.

- 1/3 rich veal stock
- 3 tblsp wotcestershire sauce

- 2 tblsp balsamic vinegar
- 2 tblsp tabasco sauce
- 2 tblsp light brown sugar
- 2 tblsp minced fresh basil
- 1 tblsp ground black pepper
- 1 tblsp sea salt
