- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/8 teaspoon pepper
- 1 jar (28 ounces) reduced-sodium meatless spaghetti sauce
- 1-1/2 cups (6 ounces) shredded reduced-fat mozzarella cheese
Goat Cheese Alfredo Pasta

- 4 bell peppers*, sliced
- 1 tablespoon olive oil
- 2 large shallots, diced
- 2 cloves garlic, sliced
- 3/4 cup 2% evaporated milk
- 2 ounces soft goat cheese
- 2 teaspoons thyme, fresh or 1 teaspoon dried
- 1/4 teaspoon black pepper
- 1/8 teaspoon red pepper flakes
- 4 cups arugula
- 8 ounces whole wheat linguini, fettuccine, or spaghetti
- 1/4 cup Parmesan, shredded

- 1 1/2 t. baking powder

- 3/4 c. buttermilk (I have made these with buttermilk as well as the 'homemade' buttermilk version of 3/4 c. milk + 2 T. lemon juice and they work out amazing either way)
