Lemon Poppy Seed Cake - my fav

This cake is light and delicious
- Cake:
- 1/2 cup butter , softened
- 1 cup sugar
- 2 eggs
- 1 1/2 cups All Purpose Flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1/4 cup poppy seeds
- 1 tbsp lemon zest (I used lemon zest from 1 lemon)
- (I added lemon juice from 1 lemon)
- Icing Glaze:
- 1 cup icing sugar
- 3 tbsp milk
- Lemon Glaze:
- 1 cup icing sugar
- 3 tbsp lemon juice
- Zest of 1/2 lemon (I added this)
Family Favorite Casserole

Preheat oven to 350 degrees
- 1 1/2 cup elbow macaroni
- 1 lb. lean ground beef
- 1/2 sliced celery (about 2 stalks) (optional)
- 1/2 cup diced onion (one small onion)
- 1 (28 oz.) can diced tomatoes
- 2 - 3 tablespoons honey
- 1 packet beef flavor enhancer
- Salt and pepper to taste
Velveeta Cheesy Bacon Brunch Casserole

HEAT oven to 350ºF. COOK bacon in large skillet on medium heat 10 min
- 8 slices OSCAR MAYER Bacon, chopped
- 2 cups frozen shredded hash browns, thawed
- 1/2 lb. fresh mushrooms, sliced
- 1 each red and green pepper, chopped
- 1 small onion, chopped
- 12 eggs
- 1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 3/4 lb. (12 oz.) VELVEETA®, cut into 1/2-inch cubes
Curried Chicken Salad

Remove chicken from the bone and dice into large bite-size pieces
- 1 whole roasted deli chicken (or 1 1/2 lbs. cooked chicken)
- Olive oil
- Salt and pepper to taste
- 1 1/2 cups mayo
- 1/3 cup dry white wine
- 1/4 cup Major Grey's mango chutney
- 3 tablespoons curry powder
- 2 stalks celery, diced
- 2 green onions (white and green parts), chopped
- 1/4 cup raisins
- 1 heaping cup red grapes, sliced in half
- 1 cup whole roasted, salted cashews
Quicky Sticky Buns

- 2 frozen bread dough leaves, thawed and raised once
- 3 T butter, melted
- 2/3 C sugar
- 1 - 1 1/2 C pecans, chopped
- 2 T light corn syrup
- 2/3 cup brown sugar
- 1/2 cup butter
- cinnamon (optional)
Down and Dirty Rice

Brown rice in butter in large skillet
- 1/2 cup butter
- 1 box Uncle Ben's Wild Rice (not instant version)
- Seasoning packet is optional
- 1 can beef bouillon soup
- 1 can French onion soup
- 1 large jar sliced mushrooms, drained
Sticky Finger Wings

Preheat oven to 425 degrees F
- 4 pounds split chicken wings and drumettes, thawed if frozen
- 1 cup sweet and sour sauce
- 1/2 cup honey
- 1/4 cup Thai sweet chili sauce
- 1 tablespoon soy sauce
- 3 cloves garlic, chopped
- 1 teaspoon ground ginger
Curried Chicken Salad

Blend curry, mayo, cream and onion
- 3 cups chicken, cooked and cubed
- 1/2 cup celery, diced
- 1/2 to 1 cup seedless grapes, cup in half (or 11 oz. can mandarin oranges)
- 1/3 cup slivered almonds, toasted (optional)
- 1 to 2 teaspoons curry powder
- 3/4 cup mayo and 1/4 cup cream ( or 1 cup mayo)
- 2 teaspoons onion, grated (optional)
- 2 teaspoons lemon juice

- 1/4 cup fresh ground black pepper

Osso Bucco with Risotto Milanese

Osso Bucco, in Italian means“Bone with a Hole”
- 4 tablespoons olive oil
- 1/2 cup all-purpose flour
- 8 veal shanks, about 1 1/2 inches thick, tied tightly around the middle with kitchen string OR 6-8 oxtails (my preferred choice)
- 3 cups chopped onions
- 1 1/2 cups diced celery
- 1 1/2 cups diced carrots
- 2 cloves garlic, minced
- 3 bay leaves
- 1 1/2 tablespoons chopped fresh thyme leaves
- 1 1/2 tablespoons chopped fresh rosemary leaves
- 3 Tbsp. tomato paste
- 1 tablespoon salt
- 1 1/2 teaspoons coarsely ground black pepper
- 2 1/4 cups dry red wine
- 1 1/2 quarts rich veal or beef stock
- 1/2 cup chopped fresh parsley leaves
