Coconut Crab Cakes with Coconut Basil Mayonnaise

Coconut Crab Cakes 1. Heat oil in a saute pan, add onion and celery until onion is translucent
- Coconut Crab Cakes
- 2 Tablespoons canola oil (plus a bunch more for frying)
- 1/2 Medium onion, finely diced
- 1 Stalk celery, finely diced
- 1 pound lumb crabmeat
- 1/2 Cup shredded coconut (sweetened or unsweetened, I chose sweetened)
- 2/3 Cup mayonnaise
- 1 Teaspoon Dijon mustard
- 2 Tablespoons chives, finely minced
- 2 Tablespoons parsley, chopped
- 5 Cups panko bread crumbs
- Salt and pepper
- 1/2 Cup all-purpose flour
- 3 Large eggs, beaten
- Diced tomatoes, for garnish (whoops, didn't garnish for that pic, did I?)
- Chives for garnish
- Coconut Basil Mayonnaise
- 1 Cup mayonnaise
- 1/3 Cup unsweetened shredded coconut
- 1 Tablespoon lime juice
- 1 Tablespoon basil leaves,chopped
- 1 Teaspoon chili garlic paste (more if you want it spicy, the 1 teaspoon will not make it spicy at all)
Pork Roast (Slow Cooker)

Rub pork with salt and pepper
- 4 lb. boneless pork loin roast
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 clove garlic, slivered
- 2 medium onions, sliced
- 2 bay leaves
- 1 whole clove
- 1/2 cup water
- 1 tablespoon soy sauce
Italian Wedding Soup

- Fortified Stock:
- 1 tablespoon olive oil
- 1 large head garlic, halved and cloves left in their skins
- 1 onion, peeled and quartered
- 1 lemon, sliced into 4 slices
- a few stems of parsley, thyme and a large bay leaf
- a few white or black peppercorns
- 1 quart chicken stock plus 3 cups water
- 1 large chunk of rind from a wheel of Parmigiano-Regggiano cheese
- For the Meatballs and Soup:
- 1/2 to 2/3 cup breadcrumbs
- 1/3 cup half-and-half
- 1 lb. ground pork
- salt and white pepper
- 1 egg
- 1/4 about 1/4 teaspoon nutmeg
- 1 clove garlic, grated or finely chopped
- 1/2 cup grated Pecorino and/or Parmigiano-Reggian cheeses
- 1 fat drizzle of EVOO - extra virgin olive oil
- 5 to 6 cups chopped, stemmed escarole, cut into bite-sized pieces
- 1/4 lb. maltagliati (torn egg pasta, Buon Italia brand preferred or broken egg lasagna sheets or other wide egg pasta
- Juice of 1 small lemon, to serve
Balsamic Marinated Tomato Mozzarella Salad

Mix together first five ingredients for dressing and toss in cheese and tomatoes
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1/2 teaspoon salt
- black pepper
- l clove minced garlic
- 3 tablespoons chopped fresh basil
- 1/4 cup onion, chopped
- 1 1/2 cups mozzarella cheese cubes
- 1 pint grape tomatoes or 1 pint cherry tomatoes, halved
Strawberry Shortcake Scones

Preheat oven to 400. In a small bowl toss together strawberries and 1 tablespoons flour
- 1 cup chopped fresh strawberries
- 2 1/2 cups plus 1 tablespoon flour
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 6 tablespoons butter
- 1 egg, lightly beaten
- 1/4 cup whole milk ricotta cheese
- 14 cup whipping cream
Peanut Butter Cookies

Mix sugars, peanut butter, shortening, butter and egg in large bowl
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup peanut butter
- 1/2 cup butter -softened
- 1 teaspoon vanilla
- 1 egg
- 1 1/4 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Layered Spinach Salad

Layer spinach, 1 cup cheese, mushrooms, onions, and peas in 2 1/2 quart bowl
- 4 cups loosely packed shredded fresh spinach
- 1 1/2 cups shredded mild cheddar cheese, divided
- 2 cups sliced fresh mushrooms
- 1 small red onion, sliced, separated into rings
- 2 (10 oz.) packages frozen peas, thawed
- 3/4 cup mayo
- 1/2 teaspoon dill weed
- 1/2 teaspoon sugar
- 4 slices bacon, cooked, crumbled
Beef Stroganoff

Cut meat across the grain into 1/2-inch strips, about 1-1/2 inches long
- 1 pound beef tenderloin or sirloin steak, about 1/2 inch thick
- 2 tablespoons butter
- 1/2 pound mushrooms, washed, trimmed and sliced
- 1 medium onion, minced (about 1/2 cup)
- 1 can (10-1/2 ounces) condensed beef broth (bouillon)
- 2 tablespoons catsup
- 1 small clove garlic, minced
- 1 teaspoon salt
- 3 tablespoons flour
- 1 cup sour cream
- 3 to 4 cups hot cooked noodles
Pork Loin Roast (Bobbie's Polish Cookbook )

- 4 to 5 lb. pork loin roast
- 1 1/2 tablespoons flour
- 1 teaspoon salt

- 1 can cola
- 1/4 cup soy sauce
- 3/4 t garlic powder
- 3/4 t ground ginger
- 3/4 t ground mustard
- 1/2 t salt
- 1/2 t pepper
- 6 bone in pork loin chops, 3/4" thick (about 8oz each)
