Fried Chicken

Wash and dry chicken pieces
- Cream gravy:
- 3 lbs. chicken pieces
- Milk or buttermilk (as needed to cover chicken pieces)
- 1/3 to 1 cup flour
- 1 teaspoon paprika
- 1 teaspoon dry mustard (optional)
- 1/2 teaspoon onion salt or onion powder
- 1 teaspoon Lawry's salt
- 1/2 teaspoon pepper
- Vegetable oil for frying
- 3 tablespoon pan drippings and butter (drain excess oil)
- 3 tablespoons flour (or Wondra)
- 1 1/2 cup cream or milk
- 1 envelope chicken-flavored packet
- Salt and pepper to taste
Tzatziki Sauce

Put all the ingredients in a mixing bowl and combine with a fork
- 1/2 English cucumber, finely grated
- 1 (8 oz.) container plain Greek yogurt
- 2 teaspoons minced fresh dill
- 1 teaspoon fresh lemon juice
Chipped Beef Dip

Blend first five ingredients well
- 8 oz. cream cheese, room temperature
- 4 oz. sour cream
- 1 clove garlic, minced
- 2 or 3 scallions, chopped
- Fresh-ground pepper to taste
- 1/4 C pecans, chopped
- 1 jar chipped beef
Beef Brisket, Onion

Preheat the oven to 350 degrees F
- 1 (3- to 3-1/2-pound) beef brisket
- 1 large onion, coarsely chopped
- 1 cup ketchup
- 1/2 cup water
- 1 envelope (1 ounce) onion soup mix
Penne Pasta with 6 Cheeses

Preheat the oven to 500. Bring a large pot of salted water to boil
- 1 cup crushed tomatoes
- 2 cups heavy cream
- 1/2 cup grated Romano cheese
- 1/2 cup shredded Parmesan cheese
- 1/2 cup shredded Fontina cheese
- 1/4 cup crumbled Gorgonzola cheese
- 2 tablepsoons ricotta cheese
- 4 slices of mozzarella, diced
- 6 fresh basil leaves, chopped
- 1 pound penne pasta
- 4 tablespoons unsalted butter
Spanish Rice

Heat oven to 350 degrees. Grease a 2-quart casserole
- 1 (28 oz.) can tomatoes with juice
- 1 medium onion, cut in eights
- 1 green pepper, cut in eights
- 1 cup cheddar cheese cubes
- 1 teaspoon salt
- 1/4 teaspoon garlic salt
- 1/4 teaspoon oregano
- Dash of pepper
- 2 cups quick-cooking rice, uncooked
Potato Leek Soup

1. In a dutch oven, melt butter and olive oil on medium heat and add leeks and onions
- 1 tbsp unsalted butter
- 2 Tbsp olive oil
- 2 leeks, thinly sliced
- 1 onion,thinly sliced
- 2 cloves garlic, minced
- 2 tsp thyme
- 6 potatoes, scrubbed and thinly sliced
- 1 Quart chicken stock
- 1/2 cup white wine (such as sauvignon blanc)
- 1/2 cup heavy cream
- 1/4 cup Parmesan cheese
- to taste salt and pepper
Almond Glazed Sugar Cookies

Dessert
- Cookies:
- 1 cup butter, softened
- 3/4 cup sugar
- 1 tsp. almond extract
- 2 cups all-purpose flour
- 1/2 tsp. baking powder
- Glaze:
- 1 1/2 cups powdered sugar
- 1 tsp. almond extract
- 4-5 tsp. water
- Sliced almonds
Chicken, Sour Cream & Bacon (Slow Cooker)

Place the bacon in a large skillet and cook over medium-low heat until some of the fat is rendered
- 8 bacon slices
- 8 boneless, skinless chicken breasts
- 2 (10 oz) cans roasted garlic cream of mushroom soup
- 1 cup sour cream
- 1/2 cup flour (all purpose or gluten free blend)
- Salt and pepper to taste
Baileys Coffee and White Chocolate Fudge

Grease a cake tin with butter and chop white chocolate into small pieces
- 150 ml Baileys with a Hint of Coffee
- 50 ml milk
- 30 g butter
- 350 g caster (super fine) sugar
- 300 g white chocolate
- Butter for greasing
