- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cold vegetable shortening, cut into bits

- 1 1/2 pounds ricotta, drained well

- 1 cup raisins
- 2 tablespoons dark or light rum

- 1 pound sweet potato (about 1 large), cooked (see Tip) and peeled

- 2 tablespoons butter, melted
- Topping
- 1/2 cup unsweetened shredded coconut

- Confectioners’ sugar (for dusting at the end)
