Preheat oven to 350 degrees F (175 degrees C)
- FOR THE CAKE
- 1 (18.25 ounce) package plain yellow cake mix (with no pudding in the mix)
- 1 (3.4 ounce) package instant pistachio pudding mix
- 2 eggs
- 1/2 cup (4 oz.) sour cream
- 1 1/2 cups water
- 1/4 cup vegetable oil
- 1/2 teaspoon almond extract
- 1/2 cup chopped pistachio nuts
- 7 drops green food coloring
- FOR THE FROSTING
- 1 package pistachio instant pudding mix
- 1 pint of heavy whipping cream (or cool whip)
- 4 drops of green food coloring (optional)
