The topping on this pie is a classic streusel, a crumbly mixture of sugar, butter, and flour spread over the top
- TOPPING
- 1 cup flour
- 1/2 cup sugar
- 1/8 teaspoon ground nutmeg
- 1/2 cup (1 stick) butter, cut into 1/2-inch pieces
- FILLING
- 6 ripe peaches (or nectarines)
- 3 tablespoons cornstarch
- 2 tablespoons sugar (if fruit is not sweet)
- 9-inch unbaked pie crust, chilled

Make crust: In a food processor*, blend together flour, sugar and butter until mixture resembles coarse meal
- FOR THE CRUST:
- 1 1/4 cups all-purpose flour
- 1/4 cup sugar
- 1/2 cup cold unsalted butter, cut into pieces
- 2 to 3 tablespoons cold water
- FOR THE FILLING:
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 large egg, beaten lightly
- 1 tablespoon all-purpose flour
- 1/4 cup seedless raspberry jam
- 1 tablespon water
- 2 – 3 cups raspberries, picked over

Preheat oven to 350°F. In medium bowl, combine ingredients for crust, mix well
- Crust:
- 1 1/4 cups - graham cracker crumbs
- 2 tbsp. - Granulated Sugar
- 1/4 cup - butter, melted
- Filling:
- 1 cup - peaches, peeled and sliced (1-2 medium peaches)
- 3/4 cup - Granulated Sugar, divided
- 2 - (8 oz.) packages cream cheese, softened
- 2 - large eggs
- 1/2 tsp. - vanilla
- Glazed Topping:
- 1/2 cup - Granulated Sugar
- 1/2 cup - water
- 2 cups - peaches, peeled and sliced
