- ■1/2 cup diced cooked ham
- ■10 ounces frozen chopped spinach or 2 cups packed fresh spinach, chopped
- ■2 tablespoons chopped onion
- ■2 tablespoons butter
- ■3 eggs
- ■1-1/2 cups half-and-half
- ■1/2 teaspoon salt
- ■1/2 teaspoon pepper
- ■1/2 teaspoon nutmeg
- ■1/4 cup Gruyere cheese
Chicken Divan

Preheat oven to 350 degrees
- 2 (10 ounce) packages frozen broccoli spears (or what you have on hand)
- 6 boneless, skinless chicken breast halves
- 2 (10 3/4 ounce) cans cream of chicken (or your choice. I’ve mixed mushroom, chicken and even cream of celery soup. If you have homemade made up, even better.)
- 1/2 cup shredded Cheddar Cheese, sharp
- 1/2 cup mayo
- 1/2 teaspoon curry powder
- 1/2 cup fine, dry breadcrumbs*
- 2 tablespoons butter, melted
- salt and pepper to taste
- Long-grain rice, cooked (optional)

Honey To Sugar Conversion

1/4 cup sugar--> 3 T. honey, reduce oven temperature by 25 degrees 1/3 cup sugar--> 3 T
- are the 3 main differences:
- 1 1.Honey 1.Honey browns more quickly in the oven or even in the frying pan (like with pancakes). The solution is baking honey-sweetened batters at a lower temperature.
- 2 2.Honey to is heavier, denser and wetter than sugar. Increasing the quantity of leavening just slightly helps to counteract this.
