- 3 (5-pound) roasting chickens
- 3 large yellow onions, unpeeled and quartered
- 6 carrots, unpeeled and halved
- 4 stalks celery with leaves, cut into thirds
- 4 parsnips, unpeeled and cut in half (optional)
- 20 sprigs fresh parsley
- 15 sprigs fresh thyme
- 20 sprigs fresh dill
- 1 head garlic, unpeeled and cut in half crosswise
- 2 tablespoons kosher salt
- 2 teaspoons whole black peppercorns
- 4 cups 1/4-inch-diced carrots
- 4 cups 1/4-inch-diced celery
- 1/4 cup minced fresh dill
- 1/4 cup minced fresh parsley
- Matzo Balls, (see recipe)
Holy Moly Guacamole Recipe (Hungry Girl)

PER SERVING (1/6th of recipe, about 1/3 cup): 78 calories, 3g fat, 320mg sodium, 10
- One 15-oz. can early/young peas, drained
- 1/2 cup mashed avocado (about 1 medium avocado's worth)
- 1/4 cup fat-free plain Greek yogurt (like Fage Total 0%)
- 4 tsp. lime juice
- 1/2 tsp. minced garlic
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1/8 tsp. ground cumin
- 1/8 tsp. chili powder
- 1/3 cup chopped cherry or grape tomatoes
- 1/4 cup finely chopped onion
- Optional: chopped fresh cilantro, chopped jarred jalapeños, additional salt and black pepper
Easy Tiramisu

- 1 1/4 cups whipping cream
- 1/4 cup confectioners' sugar
- 1 1/2 teaspoons vanilla extract
- 1 cup brewed espresso
- 2 tablespoons dark rum
- 2 (3-ounce) packages ladyfingers
- 4 (1-ounce) bittersweet chocolate squares, grated
Asian Slaw with Ginger-Peanut Dressing

Make the dressing by combining all of the ingredients in a medium bowl
- FOR THE DRESSING:
- 1/4 cup honey
- 1/4 cup vegetable oil
- 1/4 cup unseasoned rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon Asian sesame oil
- 1 tablespoon peanut butter (I like Skippy Natural No Need to Stir)
- 1/2 teaspoon salt
- 1/2 teaspoon Sriracha sauce (Thai hot sauce - optional)
- 1 tablespoon minced fresh ginger
- 1 large garlic clove, minced
- FOR THE COLESLAW:
- 4 cups prepared shredded coleslaw
- 2 cups prepared shredded carrots
- 1 red bell pepper, thinly sliced into bite-sized pieces
- 1 cup cooked and shelled edamame
- 2 medium scallions, finely sliced
- 1/2 cup chopped salted peanuts (or you can leave them whole)
- 1/2 cup loosely packed chopped fresh cilantro

- 8 ounces shredded colby-monterey jack cheese (or Swiss, if you prefer)
- 1/2 teaspoon parsley flakes
- 1/4 teaspoon Old Bay Seasoning
- 1/4 teaspoon ground dry mustard
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon garlic powder

- 1 pound unsalted butter
- 1 pound cream cheese
- 20 ounces all purpose flour, plus additional flour for rolling dough
- 2 pints fresh, rinsed blueberries
- 6 ounces water
- 1/4 cup cornstarch
- 1/4 cup fine sugar

Combine the 2 chocolates, orange liqueur, 1/4 cup water, and the vanilla in a heat-proof bowl
- 6 ounces good semisweet chocolate, chopped
- 2 ounces good bittersweet chocolate, chopped
- 1/4 cup orange liqueur (recommended: Grand Marnier)
- 1/4 cup water
- 1 teaspoon pure vanilla extract
- 1 teaspoon grated orange zest
- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
- 8 extra-large eggs, at room temperature, separated
- 1/2 cup plus 2 tablespoons sugar
- Pinch kosher salt
