Baked Stuffed Shrimp with Crabmeat Stuffing

This dish is part of our family Christmas Eve celebration every year
- 1 lb fresh lump crabmeat, shells removed (or 2 cans of canned crabmeat if fresh isn't available)
- 2 teaspoons cajun seasoning or 2 teaspoons Old Bay Seasoning (or to taste) (optional)
- 4 tablespoons butter, plus
- 3 tablespoons melted butter
- 1/2 cup onion, minced
- 1/4 cup celery, minced
- 1/4 cup green bell pepper, minced
- 1/4 cup chopped fresh parsley
- 1 tablespoon garlic, minced
- 1/4 cup mayonnaise
- 1 egg, beaten
- 3 tablespoons fresh lemon juice
- 1 tablespoon Worcestershire sauce
- 1 tablespoon hot sauce
- 1 cup buttery cracker, crushed
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 2 lbs u- 12 shrimp or 2 lbs jumbo shrimp, shelled,deveined,and butterflied
Italian Peach Cookies (Rosetta Constantino)

MAKE THE PASTRY CREAM: In a large heavy-bottomed saucepan, bring milk and lemon zest to a simmer over medium heat
- FOR THE PASTRY CREAM:
- 2 cups whole milk
- Zest of 1 lemon, removed in large strips with a vegetable peeler (I didn’t use lemon zest at all, but instead, used a vanilla bean. I also added 1 T. almond extract.)
- 4 large egg yolks
- 3/4 cup sugar
- 1/4 cup unbleached all-purpose flour
- FOR THE DOUGH:
- 3 3/4 cups all-purpose flour
- 1 tablespoon baking powder
- 3 large eggs
- 3/4 cup sugar
- 3/4 cup milk
- 1/2 cup (1 stick) unsalted butter, melted and cooled
- Grated zest of 1 lemon
- FOR ASSEMBLING THE PEACHES:
- 1/2 cup light rum or 6 tablespoons Italian maraschino liqueur plus 2 tablespoons peach schnapps (I used peach schnapps and no other liqueur, since I wanted the peach flavor to dominate.)
- Red and yellow food coloring
- 1 cup sugar, or more as needed for coating
- Fresh peach leaves or decorative sugar or chocolate leaves
Panna Cotta with Berries (Lidia Bastianich)

1. Bring the cream, 1 cup milk, 3/4 cup sugar, the vanilla bean, and orange peel to a boil
- 1 1/2 cups heavy cream
- 1 1/2 cups whole milk, divided
- 1 1/2 cups sugar, divided
- 1 vanilla bean, split lengthwise
- 1 orange, peel removed with a vegetable peeler, juiced
- 1 tablespoon powdered gelatin
- 2 cups ripe strawberries, washed and quartered
- 1 cup blueberries, washed
- Few sprigs of mint
Bourbon Burger

Combine well-chilled ground chuck with bourbon and Worcestershire sauce and mix lightly with a fork to combine
- 30 ounces ground chuck (20 percent fat)
- 2 1/2 tablespoons bourbon (recommended: Bulleit brand)
- 1 1/2 tablespoons Worcestershire sauce
- 1 1/4 teaspoons dried oregano
- 1 1/2 teaspoons ground cumin
- 1 1/4 teaspoons table salt
- 30 grinds fresh black pepper
- 6 ounces Dubliner cheese (Kerrygold brand), thinly sliced and divided into 6 (1-ounce) servings
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter (European style)
- 1 large Vidalia onion, halved (through the core) and thinly sliced (1/4-inch)
- 1/4 teaspoon table salt
- 8 grinds fresh black pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon ground cumin
- 1/4 cup bourbon (recommended: Bulleit brand)
- Brioche hamburger-sized buns, halved
- 3 tablespoons unsalted butter (European style), at room temperature
Coconut Praline Brownies

These are undoubtedly fudgey, dense and uber moist brownies
- FOR THE BROWNIES
- 3.5 oz. bittersweet chocolate, finely chopped
- 1/3 cup butter, at room temperature
- 3/4 cup granulated sugar
- 1/4 teaspoon sea salt
- 1 teaspoon pure vanilla extract
- 2 large eggs
- 1/3 cup all-purpose flour
- 1 tablespoon Dutch-process cocoa powder
- FOR THE TOPPING
- 1/4 cup granulated sugar
- 2 teaspoons water
- 2 oz. whole, lightly toasted almonds (see note below)
- 2.5 oz. (about 2/3 cups) sweetened, shredded coconut
- 1/4 cup sweetened condensed milk

In a small saucepan, bring balsamic vinegar to a boil over medium-low heat

- ◾3 whole Ripe Tomatoes, Sliced Thick
- ◾12 ounces, weight Mozzarella Cheese, Sliced Thick
- ◾ Fresh Basil Leaves
- ◾ Olive Oil, For Drizzling

Braised Brisket Barley Soup ((QVC) Slow Cooker

To prepare the beef, trim off as much fat as possible and cut into 1" cubes
- Beef:
- 3 lbs fresh beef brisket, trimmed of fat
- Salt and pepper
- 1/4 cup flour
- 1/4 cup olive oil
- Onion Mixture:
- 2 Spanish onions, thinly sliced
- 1 Tbsp garlic, minced
- 1-1/2 Tbsp tomato paste
- 1/2 cup red wine
- 1/3 cup Worcestershire sauce
- Soup Base:
- 2 leeks, split lengthwise and sliced
- 1 cup carrots, medium dice
- 1 cup parsnips, diced
- 1 cup celery root, diced
- 1 cup pearl barley
- 2 Tbsp fresh thyme
- 1 bay leaf
- 1 Tbsp salt
- 1 tsp black pepper
- 10 cups beef stock
- 1/4 cup brown gravy (optional)
- For serving:
- Loaf of crusty bread
