Garlic Lemon Chicken Green Beans and Red Potatoes

- INGREDIENTS
- 6 tablespoons olive oil
- 2 lemons, 1 thinly sliced, 1 juiced
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3/4 pound trimmed green beans
- 8 small red potatoes, quartered
- 4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)
Vegetarian Bean and Barley Vegetable Soup

In a large soup pot, sautee the onions, celery, carrots and any other vegetables for 3-5 minutes
- 1/2 onion, diced
- 2 ribs celery, diced
- 2 carrots, diced
- any other vegetables desired, 1/2 cup each
- 2 tbsp oil or margarine
- 8 cups water or vegetable broth
- 1 cup pearled barley, uncooked
- 1 cup pinto or white beans, pre-soaked if dry
- 1/3 cup tomato paste or crushed tomatoes
- 1/4 tsp salt
- 1/2 tsp pepper
- 1/4 tsp celery salt (optional)
- 1/2 tsp basil
- 1/2 tsp oregano or Italian spice mix
- 1/2 tsp thyme
- 1 tsp onion powder (optional)
- 2 large bay leaves

- 1 tablespoon olive oil
- 3 shallots, chopped
- 3 garlic cloves, chopped
- 1 medium green bell pepper, seeded and finely diced
- 1/2 cup white wine (not cooking wine)
- 10 ounces mushrooms, sliced
- 3 lbs bone-in skinless chicken breast halves or 3 lbs skinless chicken thighs
- 2 cups crushed tomatoes
- 2 tablespoons tomato paste
- 1 (6 ounce) can pitted black olives or 1 (6 ounce) can kalamata olives, drained
- 2 tablespoons chopped fresh parsley (optional)
- 1/8-1/4 teaspoon crushed red pepper flakes (optional)
- 1/2 cup grated parmesan cheese or 1/2 cup romano cheese
