Bistro Mac & Cheese

* Cook macaroni according to package directions
- 1 package (16 ounces) uncooked elbow macaroni
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2-1/2 cups 2% milk
- 1 teaspoon salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1 cup (4 ounces) shredded part-skim mozzarella cheese
- 1 cup (4 ounces) shredded cheddar cheese
- 1 package (3 ounces) cream cheese, softened
- 1/2 cup crumbled Gorgonzola cheese
- 1/2 cup sour cream

Peel and section oranges. Lay flat on a tray and freeze until hardened
- 1 3/4 cup coconut milk full fat
- 2 medium oranges
- 4 tbsp sweetener
- 1 tsp vanilla extract
Gluten-Free Red Velvet Mini Cupcakes

1. Preheat oven to 350 degrees
- For the cupcakes:
- 2 1/2 cups Gluten-Free All Purpose Flour ( I prefer Bob’s Red Mill )
- 1 1/2 cups oil
- 1 1/2 cups sugar
- 1 cup buttermilk
- 4 1/2 tsp of Ener-G Egg Replacer + 1/4 cup water ( or 3 eggs)
- 2 Tbs. cocoa powder
- 1 tsp. Baking soda
- 1 tsp. Xanthan gum
- 2 tsp. GF Vanilla
- 2 tsp. Apple Cider Vinegar
- 1 oz. Red food coloring
- 1/8 cup water
- For the frosting:
- 6 oz Cream cheese
- 1/2 cup butter at room temperature
- 2 Tbs. Buttermilk
- 1 tsp. GF Vanilla
Zesty Salad Dressing

Place all ingredients into blender in the order listed
- 1/4 cup olive oil
- 1/4 cup canola oil
- 1/2 cup apple cider vinegar (I used rice vinegar though)
- 2 Roma tomatoes, quartered
- 1 medium apple, quartered
- 2 tbs sugar
- 1 1/2 tsp salt
- 1 tsp tomato paste
- 1/4 tsp paprika
- 1 garlic clove, peeled
Strawberry Salsa

1. Mix strawberries, kiwi, cucumber, cilantro and green onion in a medium size bowl
- 1 pint fresh sliced strawberries
- 1/2 cup chopped kiwi
- 1/2 cup chopped seeded cucumber
- 1/4 cup finely shredded cilantro
- 2 tbsp. lime juice
- 1 green onion, finely chopped
- 3 tbsp. red wine vinegar
- Salt and fresh ground pepper to taste

Preheat oven to 315 degrees
- 1 1/4 packed cup Blanched Almond Flour
- 1 packed cup + 4 Tbs Chestnut Flour
- 3/4 Cup Coconut Palm Sugar
- 2 1/2 Tsp. Baking Soda (or baking powder)
- 1/4 Tsp. Salt
- 2 Tsp. Cinnamon
- 1/2 Tsp. Powdered Ginger.
- 1/4 Cup Applesauce.
Roasted Curried Cauliflower

- 1 large cauliflower (or several small ones), ~2 lbs
- Curry powder
- Olive oil

- 1 1/4 Cup Heavy Cream or Heavy Coconut milk from a Can
- 1/4-1/2 Cup (or more for a thinner sauce) of Water or Milk (dairy or nondairy-any variety)
- 2 TBSP Butter (Dairy or Nondairy)
- 2 tsp Starch (Tapioca, Arrowroot or Potato Starch)
- Salt to taste
- Pepper to taste
- 1 tsp Garlic Powder or more to taste
- 1 tsp Onion Powder or more to taste
- 2 1/4 Cup Cheddar Cheese (or Dairy Free Daiya Cheese Shreds)
- 5 Small sized White potatoes or White Sweet Potatoes (Spiralized)
- Green Scallion, sliced (optional)
