Chocolate Chip Blondies

Preheat oven to 350 F
- 1 1/2 cups blanched almond flour
- 1/4 tsp baking soda
- 1/4 tsp unrefined sea salt
- 1/2 tsp ground cinnamon
- 1/4 cup melted coconut oil
- 1/4 cup honey
- 1 egg, beaten
- 1 tsp vanilla extract
- 1/2 cup shredded unsweetened coconut
- 1/2 cup dark chocolate chips
Quick Tartar Sauce

Mix all ingredients together in a small bowl
- 1 cup mayonnaise
- 1 1/2 tablespoons sweet pickle relish
- 1 teaspoon Dijon mustard
- 1 tablespoon minced red onion
- 1-2 tablespoons lemon juice, to taste
- Salt and freshly ground black pepper, to taste
Gingerbread Cookies (GF)

Combine the dry ingredients except sugar
- 1 3/4 c GF flour mix
- 1/2-3/4 tsp ginger
- 1/2 tsp cream of tartar
- 1/8 tsp salt
- 1/2 tsp baking soda
- 1/2 c butter (cold)
- 1 1/2 tsp xanthan gum
- 1/2 c brown sugar
- 1/8 tsp cloves
- 1 egg (cold)
- 1/4-3/8 tsp cinnamon
- 1/2 cup molasses
Citrus Flavored Pasta with Goat Cheese and Spinach

Place pasta water back into pasta pot with cheese
- 3/4 lb spaghetti
- 4 oz Goat Cheese
- 10 oz baby spinach
- 3 cups flat leaved parsley coarsely chopped
- 2 cups cilantro leaves chopped
- 1/2 cup toasted walnuts
- lemon zest from 1 lemon
- 1 cup pasta water
- 1 tbsp lemon juice

- 1 Cup Blanched Almond Meal (such as Honeyville)
- 3 Large Organic Eggs
- 2 TBS Oil (I suggest Grapeseed or Coconut Oil)
- 2 TBS Water
- 3 TBS Granulated Sugar (refined or unrefined)
- 1 Tsp. Almond Extract
- 1 Tsp. Vanilla Extract
- 1/4 Tsp. Salt
- Oil for Cooking

- 3 tablespoons extra-virgin olive oil, divided
- 1 1/2 pounds ground beef
- 2 jalapeno peppers, seeded and finely chopped
- 2 medium onions, chopped
- 3 to 4 cloves garlic, chopped
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- Coarse salt and black pepper
- 1 cup water
- 2 firm Haas avocados
- 3 plum tomatoes, seeded and chopped
- Handful cilantro leaves, chopped
- Juice of 1 lemon
- 2 sacks, 10 ounces, 2 cups each shredded Monterey Jack or sharp Cheddar cheese

Separate the garlic cloves but leave them unpeeled
- 1 whole chicken, rinsed and patted dry, giblets and excess fat pockets removed
- Sprigs of fresh marjoram, sage, rosemary, and thyme; or 1 small bunch of fresh thyme
