Black Bean Taco Soup

Brown meat and onion, drain
- 1 lb ground beef (or ground turkey tastes so good in this recipe too!)
- 1 medium onion, chopped
- 1 package mild taco seasoning mix
- 1 16 oz can corn (undrained)
- 1 16 oz can black beans, drained and rinsed (you could use kidney beans or pinto beans)
- 1 14 oz can stewed tomatoes
- 1 14 oz can diced tomatoes
- 1 8 oz can tomato sauce
- 1 4 oz can diced green chilis
- tortilla chips
- Other taco toppings you like (cheese, sour cream, avocado, etc)
Homemade Peppermint Oreos

Preheat oven to 350 degrees
- Frosting:
- 2 boxes Devil's food cake mix
- 4 eggs
- 2/3 cup vegetable oil
- 1 (8ounce) package cream cheese, softened
- 1/2 cup (1 stick) butter, softened
- 4 cups powdered sugar
- 1 teaspoon peppermint extract
- sprinkles or crushed candy cane for decorating
- green or red food coloring
Kale Pesto Recipe

1. Start with a pile of fresh, washed kale that has been stripped from the stems
- One bunch fresh kale (local and organic if you can)
- 1/2 C. nuts - (note: I'm not a big fan of pine nuts, so I use a mix of roasted salted almonds and cashews. You should feel free to use pine nuts **shudder** or walnuts or hazelnuts or whatever nuts you've got in the cupboard.)
- 1/4-1/2 C. Extra virgin olive oil
- 4-6 cloves fresh garlic
- Juice of 1/2 lemon (optional)
- 1/2 C. ground Parmesan cheese (you can leave the cheese out if you're making vegan pesto or if you're freezing for future use. Add cheese after thawing.)
- Salt and freshly ground black pepper
Qdoba Queso Dip

Had this dip today and it was soooo gooood! Found a copycat recipe for it at yahoo answers
- 1 cup shreddred monterey jack cheese
- 1 cup American cheese
- 1 cup shredded cheddar cheese
- 3 roasted poblano peppers (finely chopped)
- 8 ounces tomatoes (finely chopped)
- 1 cup heavy cream
- 1 1/2 teaspoons ground garlic
- salt
Pig Pickin Cake

Preheat oven to 350 degrees
- For the cake:
- 1 box yellow cake mix
- 1 stick margarine (softened)
- 1 can (14 oz.) mandarin oranges, drained, 1/2 cup juice reserved
- 4 eggs
- 1 teaspoon vanilla extract
- For the topping:
- 1 (4 oz.) box vanilla instant pudding mix
- 1 can (20 oz. can) crushed pineapple, juice reserved
- ½ cup powdered sugar
- 4 oz. whipped topping (COOL WHIP) (half a regular tub)
- extra mandarin orange slices, for garnish

- 1 yeast packet (enclosed in mix bag)
- 1/4 cup oil
- warm water (per directions)
- 2 teaspoons cinnamon

Cheesey Hashbrown Casserole

Melt the butter in a large pot over medium heat
- Potatoes:
- 3 tablespoons butter
- 1 large yellow onion, chopped
- 1/4 cup all-purpose flour
- 1 1/2 cups low-sodium chicken broth
- 1 cup milk
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried thyme
- 2 cups shredded sharp cheddar cheese (8 ounces)
- 26-ounce bag frozen shredded hash browns
- 1/2 cup light sour cream
- Topping:
- 3 cups cornflakes, lightly crushed
- 2 tablespoons butter, melted
