Baked Garlic Parmesan Chicken

1. Preheat oven to 350 degrees F
- 3 T. olive oil
- 2 cloves garlic, minced
- 1/2 c. dry bread crumbs
- 1/2 c. panko bread crumbs
- 2/3 c. grated parmesan cheese
- 1 t. dried oregano
- 1/4 t. pepper
- 6 skinless, bonless chicken breasts

Caramelized Broccoli with Garlic

1. In a large, deep skillet, heat 2 tablespoons of the olive oil
- 1 . 3 tablespoons extra-virgin olive oil
- 2 . 2 heads of broccoli (1 1/4 pounds total), stems peeled and heads halved lengthwise
- 3 . 1/2 cup water
- 4 . 3 garlic cloves, thinly sliced
- 5 . Pinch of crushed red pepper
- 6 . Salt and freshly ground black pepper
- 7 . 2 tablespoons fresh lemon juice
Pasta Carbonara with Sausage, Bacon and Prosciutto

In large skillet, cook bacon until crisp, Drain
- 3/4 cup heavy cream (or 1/2 & 1/2), room temperature
- 3 egg, beaten, room temperature
- 1/2 cup grated Parmesan cheese, additional for serving
- 1/2 tsp salt
- 1/4 tsp coarse ground pepper
- 2 tbsp Italian seasoning
- 8 slices bacon, chopped
- 1 lb of spicy Italian Sausage (no casings)
- 1/4 lb prosciutto ham (thinly sliced)
- 4 tbsp butter
- 1/2 yellow onion, finely chopped
- 1 clove garlic, minced
- 1 lb. linguini or thick spaghetti, uncooked
Corned Beef and Cabbage

Method Corned Beef (Baked) 1 Take the corned beef from the package and discard the spice packet
- 3 lbs corned beef (in package)
- 10 whole cloves
- 1/4 cup hot sweet honey mustard
- 2 Tbsp brown sugar
- 3 lbs corned beef (in package, including spice packet)
- Olive oil and butter
- 1 medium yellow onion, chopped
- 1 cloves garlic, minced
- 1 large head of cabbage, sliced into 3/8-inch to 1/2-inch wide slices
- Salt
- 1 large head of cabbage, sliced into 3/8-inch to 1/2-inch wide slices
- Additional vegetables such as a couple carrots (cut to 1 inch pieces) or several new potatoes (quartered)

Place milk and bread crumbs in separate shallow bowls
- 1/4 cup milk
- 1/4 cup dry bread crumbs
- 4 boneless skinless chicken breast halves (about 1 pound)
- 3 tablespoons butter or margarine
- 1/2 cup chicken broth
- 1 cup whipping cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup minced fresh basil
- 1/8 teaspoon pepper

- 1 tbsp salt (I half this)
- 4 small onions finely chopped
- 1 tsp garlic powder
- 1 1/2 tbsp vinegar

- 1 1/2 tbsp Worchestershire sauce
- 1 tsp cinnamon
- 1 (6 0z) can tomato paste
- 2 crushed red pepper (you can add less)
- 4 tsp ground cumin
- 1 tsp allspice
- 5 medium bay leaves

- 2 x 200g skinless chicken breasts
- 1 tsp fennel seeds
- 2 sprigs of fresh rosemary
- 2 tbsp rapeseed oil
- 4-5 cloves of garlic
- 1-2 fresh red chillies
