Directions In a large saucepan over low heat, melt butter; add garlic and cook for 30 seconds
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup chicken broth, divided
- 1 cup heavy cream
- 1 pound skinless, boneless chicken breast halves
- salt and pepper to taste
- 2 tablespoons vegetable oil
- 2 tablespoons chopped fresh basil
- 8 ounces dry fettuccini pasta
Bananas Foster Belgian Waffles

1. Preheat a Belgium waffle iron
- 1 1/3 cups all-purpose flour
- 3/4 teaspoon baking soda
- 2 teaspoons white sugar

- Possible fillings / toppings:
- Aebleskiver pan
- 2 c flour
- 2 T sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt

- Cardamon and Vanilla (for flavoring if desired)

- Lingonberry (or favorite) Jam or Butter

Fiery Hot Texas T-Bones With Chipotle Smashed Potatoes

Seed and slice the hot and sweet fresh peppers and reserve
- 3 whole jalapeños
- 3 bell peppers (choose 3 different colors)
- 2 1/2 pounds small potatoes coarsely chopped (such as baby Yukon gold or small red skin potatoes)
- Salt as needed
- 4 slices bacon chopped
- 2 tablespoons chipotle powder divided
- 1 small onion chopped
- 1 cup sour cream
- 1 tablespoon dark chili powder
- 1 tablespoon ground cumin
- 2 tablespoons grill seasoning (Montreal Steak Seasoning by McCormick recommended)
- 2 large T-Bone steaks 1 1/2" thk, 2 1/2 lbs total

- 1 pound shredded Swiss cheese* room temperature
- 1 tablespoon all-purpose flour

- 1/2 cup dry white wine
- 1 tablespoon lemon juice
- 1/4 teaspoon ground nutmeg
