Banana-Nut Muffin Tops

Directions Position oven rack in center of oven
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 3 medium very ripe bananas, peeled
- 3/4 cup firmly packed light brown sugar
- 1/3 cup coconut oil, melted ( canola or corn oil will do)
- 2 large eggs

Sea Bass with Clams in Lemony Escarole
