Chicken Wings - Crispy baked

Crispy Baked Wings Lay the wings on a rack on a rimmed baking tray and let them dry in the fridge overnight
- Crispy Baked Wings
- 4 lb / 2 kg chicken wings, wingettes & drumettes (Note 1a)
- 2 tbsp baking powder (NOT baking soda / bi-carb soda)
- 3/4 teaspoons salt
- Sauce
- 4 tbsp / 60g unsalted butter, melted
- 1/2 cup Frank’s Original Red Hot Sauce (Note 1b)
- 1 tbsp brown sugar
- 1/4 tsp salt
- Blue Cheese Dip
- 1/2 cup crumbled blue cheese, softened (I use gorgonzola)
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 clove small garlic, minced
- 1 - 3 tbsp milk
- 2 tbsp lemon juice
- 1/2 tsp salt
- Black pepper
- To Serve
- Celery sticks
- Lots of beer
Cheese - Grilled Halloumi

Directions Preheat grill to high heat
- 1/2 pound (2-slabs) Halloumi cheese
- 2 tablespoons extra-virgin olive oil
- Cheese Marinade, recipe follows
- 1 shallot finely diced
- 1 tablespoon minced garlic
- 1 lemon, juiced
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon freshly cracked black pepper
- 1 tablespoon freshly chopped parsley leaves
Matza Muffins

Pork Tenderloin with Seasoned Rub

- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon dried thyme
- Salt
- 1 1/4 pounds pork tenderloin
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
Bean Salad with Corn and Avacado

- 1 cup halved heirloom grape or cherry tomatoes $
- 1 teaspoon salt, divided $
- 3 ears shucked corn $
- 1 medium white onion, cut into 1/4-inch-thick slices
- 1 jalapeño pepper
- 1 tablespoon olive oil $
- Cooking spray $
- 1/3 cup chopped fresh cilantro $
- 1/3 cup fresh lime juice $
- 1 (15-ounce) can no-salt-added pinto beans, rinsed and drained
- 1 (15-ounce) can no-salt-added black beans, rinsed and drained $
- 1 (15-ounce) can no-salt-added kidney beans, rinsed and drained $
- 2 diced peeled avocados
Pork Chop - Stuffed

Preheat the oven to 350 degrees F
- 4 (1-inch thick) pork chops
- 2 slices bacon, roughly chopped (crumbled bacon)
- 1 large sweet onion, 1/2 chopped and 1/2 in wedges
- 4 sprigs fresh thyme, stripped
- 2 teaspoons chopped fresh sage leaves
- 1 Granny Smith apple, peeled, cored and sliced thin (or any apple)
- 2 tablespoons unsalted butter, room temperature
- 1 1/2 cups plus 2 tablespoons pineapple-orange juice (or ckn stock)
- 1/4 teaspoon ground cinnamon
- Salt and freshly ground black pepper
- Oil, for skillet
- 1 lemon, zested
- 2 teaspoons chopped flat-leaf parsley
