Pumpkin Pie Recipe***

PREPARE CRUST Roll out dough so that it is two inches larger than your pie dish
- Chilled pie dough for one single-crust 9-inch pie (see our pie crust recipe)
- 3 large eggs
- 1/2 cup (100 grams) granulated sugar
- 1/3 cup (65 grams) light brown sugar
- 1 (15-ounce) can pure pumpkin puree or 2 cups (440 grams) fresh pumpkin puree
- 3/4 cup (175 ml) heavy whipping cream
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/2 teaspoon kosher salt

- 4 tablespoons plus 1/2 cup extra-virgin olive oil
- 1 cup buttermilk
- 1 1/2 pounds chicken tenders (about 18)

- 1 pound whole-wheat fettuccine or pappardelle noodles
- 2 cups chicken stock
- 1 tablespoon extra virgin olive oil (EVOO)
- 2 lemons, zested and sliced
- 1/2 cup tamari sauce
- 1 bunch chives, chopped into 1-inch lengths
