These light and easy to find ingredients will inspire the entire family to eat healthy
- 8 corn tortillas
- 2 ripe tomatoes
- a green pepper
- 1 piece of red pepper
- 1 avocado
- 2 sticks of celery
- 1 onion
- 4 tablespoons cooked corn kernels
- 1 chilli (optional)
- lemon juice
- 2 Cans of Isabel Light Tuna in Olive Oil
- few leaves of cilantro
- salt
Tuna Salad with Mango

Tuna pairs well with tropical produce, such as avocado, pineapple and mango
- 1 can of solid light Isabel Tuna in extra virgin olive oil
- 1/2 cup of cooked basmati rice
- 1/2 of a mango
- 1 heart of lettuce
- olive oil and salt
Tuna Enchilada Casserole

Wrap tortillas in a slightly dampened tea towel
- 8 corn tortillas
- 10 ounces red enchilada sauce
- 1 ⁄3 cup water
- 7 ounces canned tuna, drained and flaked
- 1 lb monterey jack cheese, grated
- 1 ⁄3 cup onion, chopped
- 5 black olives, sliced (optional)
Tuna and Avocado Patties

- 2 cans tuna, in water
- 1/3 cup almond meal
- 1/2 cup flaxseed meal
- 1 avocado, chopped
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon paprika
- Pinch black pepper
- Zest of 1 lemon
- 1/3 cup parsley, chopped
- 1/4 cup chives, chopped
- 1-2 tablespoons coconut oil, for frying
