Beer Battered Tilapia with Red Chile Mandarin Orange Sauce

- Olive oil
- 3/4 cup all-purpose flour, divided
- 2/3 cup beer
- 1 egg, lightly beaten
- 1 1/2 teaspoons baking powder
- 4 tilapia or flounder fillets, about 5 ounces each
- Salt
- Freshly ground black pepper
- 2 tablespoons fresh lemon juice
- 2 teaspoons red chili paste
- 1 (11-ounce) can mandarin oranges, drained and chopped
- 1 tablespoon chopped fresh cilantro leaves
Savory Spinach and Artichoke Stuffing

- 1/4 cup extra-virgin olive oil
- 2 1/2 pounds spinach, washed (3 cups cooked and roughly chopped)
- 2 cups chopped yellow onions
- 1 tablespoon roughly chopped garlic
- 1 tablespoon plus 2 teaspoons Emeril's Italian Essence, or other Italian seasoning blend
- 2 1/2 teaspoons salt
- 1 1/4 teaspoons freshly ground black pepper
- 3 (8 1/2-ounce) cans quartered artichoke hearts, any tough outer leaves removed
- 2 large eggs
- 1 1/2 cups heavy cream
- 2 cups chicken stock
- 2 tablespoons lemon juice
- 12 to 14 cups cubed (1-inch) day-old French bread (1 loaf)
- 1 pound Brie, rind removed and cut into 1/2-inch cubes
- 1/2 cup freshly grated Parmesan
- 1/4 cup minced fresh parsley leaves
Beef Tips and Artichokes with Merlot and Black Pepper Gravy

- 1 cup merlot wine
- 2 packages (17 ounces) beef tips with gravy (recommended: Hormel)
- 2 teaspoons steak seasoning
- 2 teaspoons cracked black peppercorns
- 1 box (8 ounces) frozen artichoke hearts, thawed
- 1 box (8 ounces) frozen petite peas with pearl onions, thawed
- Basil Mashed Potatoes, recipe follows
- 1 container (24 ounces) home-style mashed potatoes (recommended: Country Crock)
- 1 tablespoon prepared pesto
- 1/4 cup fresh basil leaves, finely chopped
Fresh Kielbasa

- 1 onion, quartered
- 1 teaspoon marjoram (optional)

Mushroom Risotto with Peas

- 1/2-ounce dried porcini mushrooms
- 1/4 cup unsalted butter
- 2 tablespoons olive oil
- 2 cups finely chopped onions
- 10 ounces white mushrooms, finely chopped
- 2 garlic cloves, minced
- 1 1/2 cups Arborio rice or short-grain white rice
- 2/3 cup dry white wine
- 3/4 cup frozen peas, thawed
- 2/3 cup grated Parmesan
- Salt and freshly ground black pepper, optional

Chicken Francese with Gremolata

For the gremolata, combine lemon zest on a cutting board with anchovy, parsley and garlic
- Ingredients
- Zest and juice of 2 lemons, divided
- 1 anchovy filet, optional, very finely chopped
- 1/2 cup flat-leaf parsley, very finely chopped
- 2 small cloves garlic, very finely chopped
- Salt
- 1/2 pound egg tagliatelle or thin spaghetti
- 4 pieces boneless, skinless chicken breast, butterflied (cut across but not all the way through the breast) and pounded very thin, no more than 1/4-inch thick
- Pepper
- Flour, for dredging
- 2 eggs
- 3 tablespoons EVOO – Extra Virgin Olive Oil
- 4 tablespoons butter, divided
- 1/2 cup crisp, dry white wine
- 1 cup chicken stock
- 2 cups baby spinach or upland cress
- A handful of basil, torn
