Lisa Oz's Quinoa with Vegetables and Herbs Recipe

Directions Rinse quinoa in a strainer
- 1 cup quinoa
- 1/2 tsp. kosher salt, divided
- 2 Tbsp. olive oil
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 1 medium zucchini, chopped (about 2 cups)
- 3 carrots, peeled and chopped (about 1 1/2 cups)
- 2 tsp. fresh thyme or oregano (optional)
- 1/4 tsp. crushed red pepper flakes
- 1/4 tsp. ground black pepper
- 1 Tbsp. chopped fresh chives
Greek Pasta Salad

I love having this pasta in the summer when tomatoes are at their best
- Pasta Salad:
- 1 lb. dried rotini or fusilli pasta
- 4 or 5 ripe tomatoes, cut into wedges or 1 pint cherry tomatoes, halved
- 1 cucumber, peeled and cubed (about 2 cups)
- 1 half red onion, thinly sliced and soaked in cool water for 10 minutes (about 1/2 cup)
- 1 red bell pepper, chopped (about 1 cup)
- 1 cup of Kalamata olives, pitted and halved
- 1-1/2 — 2 cups feta cheese, crumbled or cubed
- 1/4 cup chopped fresh basil or mint
- Dressing:
- 1/3 cup red wine vinegar
- 1 clove of garlic, crushed
- 1 tsp. dried oregano
- Pinch dried marjoram
- Salt
- Freshly ground black pepper
- 2/3 cup olive oil
Mushroom-Sauced Pork Chops

Trim fat from chops. In large skillet, heat oil over medium heat
- 6 pork loin chops, cut 3/4 in. thick (about 2 lbs)
- 1 tablespoon cooking oil
- 1 small onion, thinly sliced
- 2 tablespoons quick-cooking tapioca
- 1 (10-3/4 oz) can reduced-fat and reduced sodium
- condensed cream of mushroom soup
- 1/2 cup apple juice or apple cider
- 1-1/2 teaspoons Worcestershire sauce
- 2 teaspoons snipped fresh thyme or 3/4 teaspoon dried
- thyme, crushed
- 1/4 teaspoon garlic powder
- 1-1/2 cups sliced fresh mushrooms
- Fresh thyme sprigs (optional)
Sesame Chicken with Honey Dip

- Chicken:
- 1/2 cup mayonnaise
- 1-1/2 teaspoons dry mustard
- 2 teaspoons instance minced onion
- 1 cup fine dry bread crumbs
- 1/2 cup sesame seeds
- 2 cups uncooked cubed chicken
- Honey Dip:
- 2 tablespoons honey
- 1 cup mayonnaise

Sear meat of choice in a little olive oil
- 1 jar Bertolli Italian Sausage Garlic & Romano Sauce
- 1 Jar Bertolli Tomato Basil Sauce
- 1/2 - 1 lb pork, chicken, beef or combination of choice
- 1-2 bay leaf
- Parsley
- Oregano
- Basil
- Rosemary
- Minced Garlic
Hamburger Patties

This is a GREAT meal for a large crowd and can be made up to two days in advance
- 1 lb. ground beef
- 1 lb. ground pork
- 2 eggs
- Salt and pepper (to taste)
- Parsley (to taste)
- 1/2 large chopped onion (or a little less)
- 4 tablespoons bread crumbs
- 1/2 egg shell of water (can add a little milk for added moisture)
- Parmesan cheese ( to taste)
- Dash of Worchestershire sauce
- Garlic salt (to taste)
Glazed Lemon Cookies

With an electric mixer, beat the butter and granulated sugar until fluffy
- 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
- 3/4 cup granulated sugar
- 2 large egg yolks
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- 2 cups all-purpose flour
- 1 cup confectioners' sugar
- 2 tablespoons fresh lemon juice, plus more if necessary
- 1 teaspoon grated lemon zest

- 1 can (10 3/4 oz) 98% fat free 45% less sodium condensed cream of chicken soup
- 1 can (4.5 oz) chopped green chiles
- 1 container (8 oz) fat-free sour cream
- 1/2 cup fat-free (skim) milk
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 2 1/2 cups shredded cooked chicken breast
- 8 yellow corn tortillas (6 or 7 inch), torn into bite-size pieces
- 1 medium green bell pepper, chopped (1 cup)
- 1 large tomato, chopped (1 cup)
- 1 1/2 cups shredded sharp Cheddar cheese or Mexican cheese blend (6 oz)
