In a large pan, brown meat in oil
- 3 lbs (1.5 kg) boneless beef blade roast
- 2 onions, peeled and halved
- 2 tablespoons (30 ml) oil
- 4 cups (1 litre) chicken broth
- 4 cups (1 litre) water
- 1/2 lb (225 g) salt pork, cut into 2 thick slices
- 4 lb (2 kg) medium carrots, yellow and orange, peeled
- 4 fresh or frozen whole tomatoes
- 1 medium rutabaga, peeled and cut into 6 wedges
- 1/2 cup (125 ml) chopped arugula
- Salt and pepper
- I added sherry and soy to marinate meat.

Instructions Fish Combine the fish, lime juice, salt and pepper in a bowl
- 1 lb / 500g firm white fish fillet, no skin, cut into 1"/2.5cm cubes (Note 1)
- 1 tbsp lime juice
- 1/4 tsp salt

- 1 cup fish broth (or chicken broth or water)
- 1 tbsp lime juice
- 3 tbsp roughly chopped fresh cilantro / coriander

- 2 Tablespoons pure maple syrup {Note: The original recipe calls for light corn syrup, so you may use that instead.}
- 1/4 cup water
- 1 teaspoon fleur de sel

- 1/4 cup firmly packed Dark brown sugar
- 5 ounces (that's 1 1/4 sticks) unsalted, room temperature butter
- 1/3 cup heavy cream
- 8 ounces cream cheese, softened to room temperature
- 1/4 teaspoon salt
