Boston Cream Pie( good-used only the custard & ganache)

method Prepare vanilla custard: Scrape the seeds of the vanilla bean into a large heavy-bottomed saucepan
- Boston Cream Pie
- makes one 8-inch double layer cake
- for the vanilla bean custard
- 1 vanilla bean, split lengthwise
- 2 cups half & half cream
- 1/2 cup granulated sugar
- 1/8 teaspoon salt
- 5 egg yolks
- 3 Tablespoons cornstarch
- 4 Tablespoons unsalted butter, cold and cut into about 6 pieces
- for the sponge cake
- 1/2 cup cake flour
- 1/4 cup all-purpose flour
- 1 teaspoon baking Powder
- 1/4 teaspoon salt
- 3 Tablespoons half & half cream (or whole milk)
- 2 Tablespoons unsalted butter
- 1/4 teaspoon pure almond extract (or 1/2 teaspoon vanilla extract)
- 5 large eggs
- 3/4 cup granulated sugar
- for the ganache
- 8 ounces dark (or bittersweet) chocolate, chopped into tiny bits
- 1 cup heavy cream
- 1/4 cup honey
- 1/8 teaspoon salt
- 1/2 teaspoon pure vanilla extract

- For the Dough
- 4 ounces cold cream cheese, cut into 4 pieces
- 1 stick (8 tablespoons) cold unsalted butter, cut into 4 pieces
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup chopped nuts (I prefer pecans, but you can use walnuts or almonds)
- 1/4 cup plump, moist dried currants
- 4 ounces bittersweet chocolate, finely chopped, or 2/3 cup store-bought mini chocolate chips

Instructions CRUST: Preheat oven to 350 degrees
- CRUST:
- 5 oz whole graham crackers (1 1/2 cups of ground graham crackers)
- 2/3 cup sugar
- 11 tbsp butter (1 stick + 3 tablespoons)
- PIE FILLING:
- 4 egg yolks
- 1 14 oz can sweetened condensed milk
- 2/3 cup key lime juice (fresh is best, but bottled or frozen is good too)
