  • 2 tsp. Thai green curry paste, or more to taste
  • 2 Tbsp. Asian fish sauce (nam pla nuoc nam; substitute soy sauce with a dash of Worcestershire sauce or anchovy paste if desired)
  • 1 tsp. sugar
  • 1 egg, lightly beaten
  • ¹⁄3 c. green onions, white and green parts finely chopped
  • 1/4 c. chopped cilantro
  • salt to taste
  • 2 Tbsp. peanut oil
  • 1 recipe Spicy Asian Dipping Sauce
  • ¹⁄3 c. soy sauce
  • 2 Tbsp. rice vinegar
  • 1/2 tsp. sesame oil
  • 1/2 to 1 tsp. brown sugar
  • 2 Tbsp. minced green onions
  • 1/4 c. chopped cilantro leaves (optional)
  • 1 to 2 tsp. Asian chile sauce, such as Chinese chile/garlic paste or Thai chili sauce (Sriracha)
