Thai Turkey Meatballs

Pour boiling water over mushrooms to cover and soak at least 30 minutes (up to 3 hours) to soften
- 4 shiitake mushrooms
- 1 1/2 lbs. ground turkey (preferably dark meat)
- 2 tsp. minced ginger
- 2 tsp. Thai green curry paste, or more to taste
- 2 Tbsp. Asian fish sauce (nam pla nuoc nam; substitute soy sauce with a dash of Worcestershire sauce or anchovy paste if desired)
- 1 tsp. sugar
- 1 egg, lightly beaten
- ¹⁄3 c. green onions, white and green parts finely chopped
- 1/4 c. chopped cilantro
- salt to taste
- 2 Tbsp. peanut oil
- 1 recipe Spicy Asian Dipping Sauce
- ¹⁄3 c. soy sauce
- 2 Tbsp. rice vinegar
- 1/2 tsp. sesame oil
- 1/2 to 1 tsp. brown sugar
- 2 Tbsp. minced green onions
- 1/4 c. chopped cilantro leaves (optional)
- 1 to 2 tsp. Asian chile sauce, such as Chinese chile/garlic paste or Thai chili sauce (Sriracha)
Creamy Garlic Pasta with Shrimp & Vegetables
