Chocolate Buttermilk Quick Cake

1. Spray 5 small loaf pans with nonstick cooking spray and place on a baking sheet
- 2/3 cup cocoa powder
- 1/4 cup boiling water, plus a little more if needed*
- 2 cups sugar
- 1 3/4 cups unbleached all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 1 cup buttermilk
- 2 eggs, lightly beaten
- 1/2 cup sour cream
- 1/2 cup vegetable oil
- 4 tablespoons butter, melted
- 1 teaspoon pure vanilla extract
- 1 cup semisweet chocolate chips, melted

Preheat oven to 350 degrees F
- 1 cup uncooked quinoa
- 1 cup oats
- 1/2 cups coconut
- 1 cup combination of nuts and dried fruit (I used just pecans in the pictures above)

- 1 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- 3/4 cup pureed sweet potatoes (or pumpkin)
- 2 bananas, mashed
- 1/2 cup unsweetened applesauce
- 2 tsp vanilla
- 1/4 cup honey/maple syrup/sugar/sweetener of choice (or to taste)
- Optional: spices/nuts/mix ins of your choice

Preheat the oven to 350°F: Heat the oven to 350°F with a rack placed in the middle position
- 4 large eggs
- 1 cup Nutella (slightly less than a whole 13-ounce jar)

- 2 tsp dry active yeast

- 1/2 cup canned coconut milk
- 2 small eggs
- 1/3 cup honey
- 1/3 cup melted coconut oil (I used expeller pressed)
- 1 tsp vanilla
