Homemade peanut brittle is easy to make, and so delicious! Buttery, sweet and full of peanuts (or cashews), you'll
- 2 cups sugar
- 1 cup corn syrup
- 1/4 cup water
- 1 1/2 cup peanuts (or cashews)
- 4 tablespoons butter
- 2 teaspoons baking soda
- 1 teaspoon vanilla
Pumpkin Pie

In a large mixing bowl, whisk together the sugars, flour, salt, and spices
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tablespoon King Arthur Unbleached All-Purpose Flour
- 1/2 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/8 teaspoon ground cloves
- 1/8 teaspoon freshly ground black pepper (optional)
- 3 large eggs, beaten
- 2 cups (or one 15-ounce can) pumpkin
- 1 1/4 cups light cream or evaporated milk
- Use your favorite single pie crust recipe

- For the Chocolate Cupcakes
- 3/4 cup all purpose flour
- 1/3 cup cocoa powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup plus 2 tablespoons granulated sugar
- 1/2 cup buttermilk
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon pure vanilla extract
- For the Peanut Butter Buttercream
- 1/2 cup granulated sugar
- 2 large egg whites
- 1/8 teaspoon salt
- 12 tablespoons softened unsalted butter,
- cut into 1/2-inch pieces
- 1 cup peanut butter
- 2 teaspoons pure vanilla extract
- For the Chocolate Coating
- 8 ounces semi-sweet chocolate, finely chopped
- 1 1/2 tablespoons vegetable oil
Chipotle's Copycat Barbacoa

Prepare roast. Make sure all visible fat is trimmed
- 2 teaspoons kosher salt, divided
- 3-4 pound chuck roast, fat trimmed
- 2 tablespoons extra virgin olive oil
- 2 bay leaves
- Sauce
- 1/4 cup apple cider vinegar
- 6 cloves garlic
- 4 teaspoons ground cumin
- 1 tablespoon dried oregano
- 1 teaspoons ground black pepper
- 1/8 teaspoon ground clove
- 4 chipotle peppers (from a can, packed in adobo sauce)
- 1 tablespoon adobo sauce (from the chipotle pepper can)
- 1 cup chicken broth (or 1 cup water and 1 teaspoon chicken base)

Preheat oven to 325 F degrees
- 4 eggs (separate yolks from whites) at room temperature
- 1 tsp vanilla extract
- 150 g (3/4 cup) sugar
- 125 g (1 stick or 1/2 cup) butter, melted
- 115 g (4 oz or 3/4 cup) of all purpose flour
- 500 ml (2 cups) milk lukewarm

Magic Coconut Cake

Place all the ingredients in a blender
- 2 cups milk
- 1 cup shredded coconut
- 4 eggs
- 1 tsp vanilla extract
- 1/2 cup all purpose flour
- 8 tbsp (1 stick or 125 g) butter
- 3/4 cup sugar

BUFFALO CHICKEN LASAGNA

In a medium pot, heat the olive oil and butter over medium heat until butter is melted
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/4 cup onion, diced
- 1 clove garlic, minced
- 8 ounce cream cheese
- 1 cup buffalo wing sauce
- Hot pepper sauce such as Franks Red Hot or Tabasco (amount based on your own preference)
- 2 cups cooked chicken, shredded (I baked chicken tenders in the oven covered with foil at 350 for 25 minutes)
- 1/2 cup ranch dressing
- 8 ounce package of shredded mozzarella cheese
- Lasagna noodles, cooked according to package directions
