Overnight Caramel Pecan Rolls

Warm the milk in a small saucepan until it bubbles, then remove from heat
- 2 cups milk
- 2 (.25 ounce) packages active dry yeast
- 1/2 cup warm water
- 1/3 cup white sugar
- 1/3 cup vegetable oil
- 1 tablespoon baking powder
- 2 teaspoons salt
- 1 egg
- 7 cups all-purpose flour
- 1 cup packed brown sugar
- 1/2 cup butter
- 2 tablespoons light corn syrup
- 1 cup pecan halves
- 1/4 cup butter, softened
- 1/2 cup white sugar
- 1 1/2 tablespoons ground cinnamon

Combine milk and 1/2 cup of butter in saucepan over low and cook until butter melts

Red Velvet Cheesecake

Directions: 1. Make the Cheesecake: Preheat oven to 350 degrees F
- For the Cheesecake:
- 32 ounces cream cheese, at room temperature
- 1 1/4 cups granulated sugar
- 4 eggs, at room temperature
- 3/4 cup heavy cream
- 1 tablespoon vanilla extract
- For the Red Velvet Cake:
- 1 cup unsalted butter, at room temperature
- 1 1/2 cups granulated sugar
- 2 eggs
- 1/4 cup + 1 tablespoon unsweetened cocoa powder
- 6 tablespoons red food coloring (liquid)
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon distilled white vinegar
- For the Cream Cheese Frosting:
- 1 cup butter, at room temperature
- 8 ounces cream cheese, at room temperature
- 5 cups powdered sugar
- 2 tablespoons vanilla extract
Coconut - Cream Cheese Sheet Cake

Directions Preheat oven to 350 degree F
- Note:
- 1 c
- butter, softened (2 sticks)
- 6 oz cream cheese, softened
- 6 eggs
- 2 C sugar
- 1 tsp vanilla extract ( i used 1/2 tsp vanilla and 1/2 tsp coconut extract
- 2 1/4 C cake flour or all purpose flour
- 1/4 C coconut milk or cream of coconut ( optional )
- FROSTING - I DOUBLE THIS
- 1/4 C butter,softened
- 4 oz cream cheese, softened
- 1/2 tsp vanilla or coconut extract is good as well
- 1 1/2 C confectioners' sugar
- 1/2 C coconut- for toasting and sprinkling on top of the frosting
- can add a few tablespoons milk, cream or coconut milk ( i don't , as i like a thick frosting on the cake )
