Flourless Peanut Butter Chocolate Chip Cookies

1) Preheat your oven to 350°F
- cup smooth peanut butter:
- cup brown sugar:
- teaspoon baking soda:
- pinch of salt:
- large egg:
- teaspoon vanilla extract:
- cup chocolate chips or mini chips:
Baked Feta with Marinara

Preheat oven to 350°. Combine first 4 ingredients in a bowl
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon crushed red pepper
- 2 garlic cloves, minced
- 1 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano, drained ( drain in a colander)
- 1 (4-ounce) package feta with Mediterranean herbs or Italian herb
- Cooking spray
- 32 (1/2-inch-thick) slices diagonally cut French bread baguette (about 1 pound), toasted
Semolina Pasta Dough

We make this pasta dough and it turns out perfectly every time
- 1 cup semolina flour
- 3/4 cup all-purpose flour
- 2 large eggs, room temp
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 tablespoon water
Chef John's Italian Meatballs

Cover a baking sheet with foil and spray lightly with cooking spray
- 1/3 cup plain bread crumbs
- 1/2 cup milk
- 2 tablespoons olive oil
- 1 onion, diced
- 1 pound ground beef (lean)
- 1 pound ground pork ( i used 2 Randall's grocery store links of sweet italian sausage and 2 link mild italian sausage from the counter)
- 2 eggs
- 1/4 bunch fresh parsley, chopped ( used dried)
- 3 cloves garlic, crushed (used garlic powder)
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon red pepper flakes ( left out)
- 1 teaspoon dried Italian herb seasoning
- 2 tablespoons grated Parmesan cheese
Herbed Couscous Pilaf

1. Heat a small saucepan over medium-high heat
- 1 tablespoon olive oil
- 1/4 cup finely chopped shallots
- 1 cup uncooked couscous
- 1 cup plus 2 tablespoons fat-free, lower-sodium chicken broth
- 1/4 teaspoon salt
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 teaspoon chopped fresh thyme
Thai Chicken Soup

- 1 lb boneless chicken breasts or thighs, sliced thinly (thighs are much more tender)
- 1 tsp toasted sesame oil
- 1 small onion, diced
- 2 bell peppers, diced
- 2 summer squash, diced
- 6 oz sugar snap peas, chopped into bite size pieces
- 2 - 3 tbs Thai green curry paste
- 1 can full fat coconut milk
- 1 tbl gluten free fish sauce
- 1 tbl coconut aminos
- 4 cups no added salt chicken broth (or half stock, half water)
- 1 - 2 tbl dried Thai basil (fresh would be amazing if you can get it!)
- Juice of half a lime
- Chopped fresh cilantro to taste
- Bunch of green onions, chopped
- Optional: Red pepper flakes to taste
- Optional: 1 tbl coconut sugar. NOT Whole30 approved, leave out if following.
Cheesy Cauliflower Pancakes

Cut cauliflower into florets & cook in boiling water until tender about 10 minutes
- 1 head cauliflower
- 2 large eggs
- 1/2 c cheddar cheese, grated
- 1/2 c panko
- 1/2 t cayenne pepper (more of less to taste)

- Frozen Italian style meatballs (1/2 oz each)
- generally, enough to cover the bottom of the pan. Depends on who is home.
- Extra virgin olive oil
- 1 + Tbsp - just enough to brown up the meatballs.
- 2 cups beef broth
- use more for more meatballs... just go with this recipe. Don't over think it.
- Seasoning
- kosher salt and black pepper to taste
- dried herbs (probably at least 1 - 1 1/2 tsp each) - parsley, oregano, basil
- it will look like a lot of seasoning, but in the end, it will be great!
- 2/3 - 1 cup sour cream
- 1 cup heavy whipping cream
- Wide egg noodles
- enough for whoever is there.
Ranch Style Taco Soup

In a nonstick medium skillet over medium heat, Cook the ground beef
- 1 lb ground beef, 96% lean
- 1 Lg chopped onion
- 3 carrots, peeled, cut in half and sliced thin
- 1 cans kidney beans
- 1 can hominy or corn
- 1- 15oz can Ro-Tel ( mild or regular)
- 1- 15 oz can Tomato, diced
- 1.5 TBSP Penskey's Ranch Dressing mix
- 1 TBSP chili powder
- 1 TBSP cumin
- 1/2 tsp garlic powder
- 2 tsp dried cilantro
- 2 tsp paprika
- 1 tsp oregano
- 1/2 tsp salt
- 2 cups water
