Peanut Butter Chocolate Clouds

- 1 sheet puff pastry, thawed and rolled out just slightly
- 1/3 to 1/2 cup creamy peanut butter
- 1/3 cup chocolate chunks or chips
- water for brushing the edges of the pastry
- cream or half and half for brushing the tops of the pastry
- granulated sugar for sprinkling on top of the pastry
Spiced Pecans

Nuts are considered a quality protein, and they offer plenty of good-for-you fats along with some fiber
- 1 large egg white
- 1 teaspoon water
- 2 cups pecan halves
- 1/2 cup sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/8 teaspoon freshly ground black pepper
- Cooking spray
Mexican Cheese Dip

The night before mix cream cheese, sour cream and onion
- 2 (8 oz.) pkgs. cream cheese
- 2 (8 oz.) sour cream
- 1 (8 oz.) sharp white cheese, grated
- 1 (8 oz.) sharp yellow cheese, grated
- 1 onion, diced
- 3-4 green peppers, diced
- 3-4 tomatoes, diced
- 1 jar med. or hot salsa
- 2 bags nacho or corn chips or crackers
Chocolate Chip Walnut cookies (Levain Bakery copycat)

These are the best cookies I have ever eaten
- • 2 sticks ‘cold and cubed’ unsalted butter
- • 1/2 cup granulated sugar
- • 1 cup light brown sugar
- • 1/2 cup dark brown sugar
- • 2 eggs
- • 2 3/4 to 3 1/4 cups AP flour
- • 1 teaspoon table or fine sea salt
- • 1 teaspoon baking powder
- • 1/4 tsp baking soda
- • 2 cups good quality semisweet chocolate chips or chunks (I usually use half semisweet and half milk chocolate)
- • 1 cup walnuts (Toast the nuts for more flavor, if desired. Use any kind of nut you like. I love macadamias in these)
Pizza Dough

Dissolve yeast in warm water
- 1 pkg. dry yeast
- 1 c. warm water
- 3 c. flour
- 1 tsp. sugar
- 1 1/2 tsp. salt
- 1/4 c. salad oil
Lentil patties

1. Rinse and pick through lentils
- 2-1/2 cups water
- 1 cup uncooked Lentils
- 3/4 cup corn flakes, ground in blender
- 3/4 cup oatmeal, finely ground in blender
- 1/2 cup ketchup
- 1/2 cup “parmesan cheese” (see recipe below)
- 2-1/2 tablespoons Old Bay seasoning
- 1 tablespoon low sodium soy sauce
