Carrot Raisin Salad

Shred carrots, soak raisins in lemon juice
- 1/2 cup shredded carrots
- 1/2 cup seedless raisins
- 4 Tbsp. lemon juice
- 1/4 cup mayonnaise
- 6-12 lettuce leaves or 1 1/2 cups shredded cabbage
Low Carb Pumpkin Pie Bites

Using a hand mixer... whip your cream cheese add your eggs and whip with the cream cheese add pumpkin add the spice...
- 1 8 oz pkg of cream cheese
- 5 large eggs
- 2 tsp of liquid stevia (OR if you are not a low carber , 1 cup of sugar)
- 2 cups of 100% pure pumpkin
- 1/4 tsp don't make it heaping ground ginger
- 1/4 tsp don't make it heaping of ground cloves
- 1/4 tsp don't make it heaping of nutmeg
- 1/4 tsp don't make it heaping of all spice
- 1 tsp vanilla
Cookie Dough Truffles

- 3/4 cup packed brown sugar
- 1 tsp. vanilla
- 2 cups flour
- 1 14oz. can sweetened condensed milk
- 1/2 cup mini semisweet chocolate chips
- 1/2 cup chopped walnuts
- 1 1/2 lbs. dark chcolate candy coating, coarsley chopped
15 Minute Donuts, From Scratch

Preheat oil over medium heat in a 10 inch non-stick fry-pan (keeping an eye on it as it is heating)
- 1 1/4 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup milk
- 1/4 cup buttermilk
- 1/4 cup granulated sugar
- 3 Tbsp melted butter
- 2 cups vegetable oil, for frying
- Granulated sugar, cinnamon sugar or powdered sugar, for coating

Preheat oven to 325 degrees
- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup white sugar
- 1/2 teaspoon vanilla extract
- 2 eggs
- 1 (9 inch) graham cracker crust or regular pie crust
- 1/2 cup pumpkin puree
- 1/2 teaspoon ground cinnamon
- 1 pinch ground cloves
- 1 pinch ground nutmeg

In a large saucepan of 2 cups water, cook quinoa according to package instructions; set aside
- 1 cup quinoa
- 1 can (10-ounce) Old El Paso™ mild enchilada sauce
- 1 can (4.5-ounce) Old El Paso™ chopped green chiles, drained
- 1/2 cup canned corn kernels, drained
- 1/2 cup canned black beans, drained and rinsed
- 2 tablespoons chopped fresh cilantro leaves
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Kosher salt and freshly ground black pepper, to taste
- 3/4 cup shredded cheddar cheese, divided
- 3/4 cup shredded mozzarella cheese, divided
- 1 avocado, halved, seeded, peeled and diced

Cook and crumble bacon. While bacon is cooking, cut chicken into bite sized chunks
- 4-5 boneless, skinless chicken breasts
- 6 strips of quality bacon
- 2 cans cream of chicken soup
- 2 cups shredded Monterrey Jack cheese
- 1 box (16 ounces) dried spiral pasta
- 1 tablespoon garlic powder
