- Ingredients
- 16 dried Kashmiri chile peppers, stemmed and seeded
- 1 (1 inch) piece cinnamon stick
- 1 teaspoon cumin seeds
- 6 whole cloves
- 1/2 teaspoon whole black peppercorns
- 1/2 teaspoon ground turmeric
- 1 tablespoon white vinegar
- salt to taste
- 2 pounds boneless pork loin roast, trimmed and cut into 1-inch cubes
- 1/4 cup vegetable oil
- 4 onions, chopped
- 10 cloves garlic, minced, or more to taste
- 1 (2 inch) piece fresh ginger root, minced
- 2 cups boiling water
- 2 green chile peppers, seeded and cut into strips

- For the meatballs:
- 3/4 pound ground chicken
- 1/2 pound chicken sausage, casings removed
- 2/3 cup fresh white bread crumbs
- 2 t. minced garlic (2 cloves)
- 3 T. chpped fresh parsley leaves
- 1/4 c. freshly grated Pecorino Romano
- 1/4 c. freshly grated Parmesan, plus extra for serving
- 3 T. milk
- 1 extra-large egg, lightly beaten
- Kosher salt and freshly ground black pepper
- For the soup:
- 2 T. good olive oil
- 1 c. minced yellow onion
- 1 c. diced carrots (3 carrots), cut into 1/4 inch pieces
- 3/4 c. diced celery (2 stalks), cut into 1/4 inch pieces
- 10 c. homemade chicken stock
- 1/2 c. dry white wine
- 1 c. small pasta such as tubetini or stars
- 1/4 c. minced fresh dill
- 12 oz. baby spinach, washed and trimmed

- 1/2 teaspoon sea salt
- 1/2 teaspoon pepper
- 3 egg whites, lightly beaten
- 15 gingersnap cookies, crushed (about 1/2 cup)
- 1/2 cup panko bread crumbs
- 1/4 cup whole wheat pastry flour
- 1/4 cup regular seasoned bread crumbs
Black Bean Burger

- Ingredients
- 2 cups black beans, drained and mashed with a fork
- 1 cup seasoned breadcrumbs
- 1/4 cup grated onions
- 1/2 teaspoon chili powder
- 1 egg
