Amazing Pickled and Marinated Vegetables

Make sure you have some small sterilized jars ready to go
- For the pickling liquid:
- 1 quart cider or white wine vinegar
- 1 quart water
- 2 tablespoons sea salt
- For the pickling marinade:
- 2 cups extra-virgin olive oil
- 5 cloves garlic, peeled and sliced
- 1 fresh red chili, deseeded and chopped
- Choose 1 of the following vegetable and herb options:
- 2 pounds mixed mushrooms and a few sprigs of fresh thyme, rosemary and sage
- 2 pounds firm eggplant and 2 tablespoons dried oregano
- 2 pounds firm zucchini and 6 sprigs of fresh mint
- 2 pounds fennel bulbs and their herby tops
- 2 pounds small onions and 4 bay leaves
- 2 pounds red and yellow peppers and a few sprigs of fresh thyme
3 Cheese Enchiladas

reheat oven to 350 degrees F (175 degrees C)
- 1 (8 ounce) package cream cheese, softened
- 2 cups prepared salsa
- 2 green onions, chopped
- 2 cups shredded Cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 12 (8 inch) flour tortillas
- 1/2 cup shredded Cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1 cup salsa, or as desired
- 2 green onions, chopped
Rhubarb Cobbler

All the directions are in the ingredients
- Sprinkle on rhubarb:
- 4 cups Rhubarb cut and placed in 9" baking dish
- 2 Tbsp water, 2 cups sugar and 1/4 tsp nutmeg
- TOPPING:
- 1/2 C butter, 1/2 C Brown Sugar, 1 Cup Flour
- Bake 350 degrees 45 minutes.
- Top with vanilla ice cream and serve….
Flag Fruit Pizza

Spray a pizza sheet (I used a disposable one) with cooking spray
- Crust:
- cooking spray
- 1 package refrigerated sugar cookie dough
- “Sauce”:
- 1 package (8 oz) cream cheese, softened
- 1/4 cup powdered sugar
- 4 oz (1/2 an 8 oz container) frozen whipped topping, thawed
- Glaze:
- 1/4 cup sugar
- 1/4 cup orange juice
- 2 Tbsp. water
- 1 Tbsp. lemon juice
- 1 1/2 tsp. cornstarch
- Pinch of salt
Hawaiian Dream Cake

Prepare cake mix according to package directions, using the reserved pineapple juice and water for the liquid call...
- 1 package yellow cake mix
- 1 (20 oz.) can crushed pineapple, drained, reserve juice
- 1 8-ounce package cream cheese
- 1 (3-oz.) pkg. instant vanilla pudding
- 1 cup cold milk
- 1 (9-ounce) container cool whip
- Nuts and coconut
Cheesecake Dip

Press crushed graham crackers in bottom of an 8x8" pan Beat together the Fluff and cream cheese until well blended
- 1 tub cool whip topping thawed
- 1 small jar Fluff marshmallow topping
- 1 pkg 8z cream cheese room temp
- crushed graham crackers - approx 10-12
- 1 can cherry pie filling

Broccoli and Tortellini Salad

Place bacon in a large, deep skillet
- 6 slices bacon
- 20 ounces fresh cheese-filled tortellini
- 1/2 cup mayonnaise
- 1/2 cup white sugar
- 2 teaspoons cider vinegar
- 3 heads fresh broccoli, cut into florets
- 1 cup sunflower seeds
- 1 red onion, finely chopped
Chicken or Turkey Tetrazzini

Cook spaghetti in lots of boiling sated water
- 1 lb mushrooms, sliced
- 1/2 green pepper, diced
- 1 cup fresh or frozen peas
- 6 Tbsp butter
- 6 Tbsp flour
- 2 tsp salt
- 1/4 tsp pepper
- 2 cups light cream
- 1 cup chicken broth
- 2 Tbsp sherry
- 2 egg yolks, beaten
- 4 cups chicken or turkey in chunks
- 6 oz. fine spaghetti, cooked
- Parmesan cheese or your favorite cheese

Electric mix the cream cheese until smooth
- Crust Ingredients:
- 5 ounces Oreo cookies, crushed in food processor
- 5 Tablespoons melted butter
- 1/3 c. sugar
- pinch salt
- Combine all of the above and press into an 8x8 pan lined with nonstick foil. Bake at 350 for 8 mins. Let cool.
- Cheesecake Ingredients:
- 7 ounces Pillsbury Peanut Butter Cookie Dough, rolled into small cookie dough rounds-keep chilled till ready to use
- 8 ounces room temp cream cheese
- 1/2 c. sugar
- 1 egg
- 2 T. Flour
