Ingredients

  • 1 lb mushrooms, sliced
  • 1/2 green pepper, diced
  • 1 cup fresh or frozen peas
  • 6 Tbsp butter
  • 6 Tbsp flour
  • 2 tsp salt
  • 1/4 tsp pepper
  • 2 cups light cream
  • 1 cup chicken broth
  • 2 Tbsp sherry
  • 2 egg yolks, beaten
  • 4 cups chicken or turkey in chunks
  • 6 oz. fine spaghetti, cooked
  • Parmesan cheese or your favorite cheese

Preparation

Step 1

Cook spaghetti in lots of boiling sated water. Sauté mushrooms and green pepper in butter; remove from heat. Stir in flour, salt and pepper; add cream and broth slowly, stirring constantly until thickened. Mix a little white sauce to egg yolks; blend into white sauce; add mushroom, green pepper, peas, meat and sherry.

Place cooked spaghetti in long grease baking dish. Pour sauce over spaghetti. Sprinkle with Parmesan cheese. Bake covered at 350 degrees F. for 20 minutes until bubbly. Serves 6 to 8
