Swordfish Panini with Arugula and Lemon Aioli

Directions For the Lemon Aioli: Mix together all the ingredients in a small bowl
- Aioli:
- 2/3 cup mayonnaise
- 1 lemon, zested
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Swordfish:
- 1 1/2 tablespoons olive oil
- 4 (6-ounce) pieces swordfish, about 1-inch thick
- Salt and freshly ground black pepper
- 1 tablespoon herbs de Provence or Italian seasoning
- 2 cloves garlic, minced
- 1 loaf focaccia bread
- 2 ounces (about 2 cups) fresh arugula greens
Broiled Scallops

- 1 1/2 pounds bay scallops
- 1 tablespoon garlic salt
- 2 tablespoons butter, melted

- Glaze:
- 1 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp kosher salt
- 1 cup plain, whole milk yogurt
- 1 1/3 cups sugar, divided
- 3 eggs
- 2 tsp lemon zest (2 lemons)
- 1/2 tsp vanilla extract
- 1/2 cup vegetable oil
- 1 cup blueberries (optional)
- 1/3 cup freshly squeezed lemon juice
- 1 cup confectioners' sugar
- 2 TBL freshly squeezed lemon juice
