White Chicken Enchiladas

1. Preheat oven to 350 degrees
- 10 small soft taco shells
- 2 cups cooked, shredded chicken
- 2 cups shredded Monterey Jack cheese
- 3 Tbsp. butter
- 3 Tbsp. flour
- 2 cups chicken broth
- 1 cup sour cream
- 1 (4 oz) can diced green chilies

- 1/4 cup soy sauce
- 2 tablespoons sugar
- 4 garlic cloves, Minced
- 2 tablespoons rice vinegar
- 3 tablespoons pure sesame oil
- 1/2 teaspoon hot chili oil (or to taste)
- 4 tablespoons canola oil
- 2 tablespoons hot water
- 4 whole green onions, Sliced Thin
- 12 ounces Asian noodles or 12 ounces other thin noodles
- 12 ounces other thin noodles
Creamy Garlic Pasta

It’s rich and creamy, while the fresh parsley gives it a nice bit of color and flavor
- 2 teaspoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons butter
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 3 cups chicken stock
- 1/2 pound spaghetti or angel hair pasta
- 1 cup grated parmesan cheese
- 3/4 cup heavy cream
- 2 tablespoons chopped fresh parsley
Crock Pot Lasagna

Spray the inside of the Crockpot with non-stick cooking spray
- 1 lb ground beef
- 1 lb sausage (I use Jimmy Dean Sausage)
- 8oz package lasagna noodles (uncooked)
- 40 oz pasta sauce
- 3 oz shredded Mozzarella cheese
- 1 1/2 cups shredded Parmesan cheese

Crockpot Bacon and Cheese Potatoes

Line crockpot with foil, leaving enough to cover the potatoes when finished – this will help to not stick and to ...
- 1/4 pound bacon, diced – I bake it first in the oven so that it is “done” and browned then I dice it and place in the crock pot.
- 1 small onion, thinly sliced
- 6 – 8 red potatoes, quartered (thinly sliced if using regular potatoes or if you use a new potato then halve)
- 1/2 pound cheddar cheese, thinly sliced (shredded is fine)
- salt and pepper

- CAKE
- 3 cups grated carrot
- 1 1/4 cups vegetable oil
- 1 3/4 cups sugar
- 2 cups plain flour
- 4 large eggs
- 2 tsp. lemon extract
- 2 tsp. vanilla extract
- 2 tsp. baking powder
- 1/2 cup pecans
- 1/2 cup raisins
- 1 tsp. salt
- 2 tsp. ground cinnamon
- FROSTING
- 4 TBL butter
- 1 box 10X sugar
- 1 tsp. lemon extract
- 12 tsp. vanilla extract
- 8 oz. cream cheese (softened)

- 1 1/2 tbsp olive oil
- 15 asparagus, average size
- fettuccine (fresh)
- 1 1/2 tbsp butter, unsalted
- 1/2 shallots, finely chopped
- 1/2 clove garlic, finely chopped
- 11 mini-tomatoes (cherry, miniature or grape)
- 80 g feta cheese, diced
- 1/4 cup cream
- 1 pinch nutmeg, to taste
- salt to taste
- ground pepper to taste
