Garlic Mashed Potatoes

Bring a large pot of salted water to a boil
- 4 pounds unpeeled red potatoes, quartered
- 10 ounces butter, room temperature
- 1/4 pound Romano cheese, grated
- 3 tablespoons and 2-1/2 teaspoons chopped garlic
- 2 teaspoons salt
- 2 teaspoons dried oregano
Steak and Cheddar Pasties

Old school hot pocket from the Cornish region of England
- 1 medium potato, peeled and diced in 1/4 inch pieces
- 1 medium onion, finely chopped
- 1 small rutabaga (similar to a turnip, in produce section)
- 1/2 lb chuck or 1 round steak, cut into 1/2 inch cubes
- 1 cup shredded cheddar cheese
- salt & pepper
- 1 pinch dried thyme (optional)
- 2 cups flour
- 2 ounces cold butter, diced
- 2 ounces vegetable shortening or 2 ounces lard, chilled and diced
- cold water (add ice cubes to keep very cold)
- 1 eggs, beaten (to glaze)
- 1 tbs melted butter (to glaze)
Jalapeno Cheese Bread

Delicious jalapeno cheese bread
- 1/2 cup warm water
- 2 packages dry yeast
- 1/4 cup sugar
- 1/8 cup shortening
- 1/8 cup butter (softened)
- 1 1/4 cups potato water
- 1/4 cup jalapeno juice
- 2 cups milk
- 10 or 11 cups white flour
- 6 oz jalapenos, diced
- 3/4 cup shredded cheddar cheese
Crab Frittata

Heat oven to 350 degrees. Brush ramekins or 11 x 7 baking dish with olive oil
- 8 oz swiss chard
- 2 tbs olive oil
- 1/2 cup chopped onion
- 1/4 cup chopped red bell pepper
- 1 tbs bread crumbs
- 3/4 cup crab, flaked
- 1/2 cup grated Monterey Jack cheese
- 1/2 cup grated cheddar cheese
- 8 large eggs, room temperature, beaten
- salt and pepper to taste
- 2 tbs grated Parmesan cheese
Protein Bars

Combine all ingredients in a mixing bowl and pulse to mix to a dough like consistency
- 1 1/2 cups old fashioned oats
- 1 1/2 cups powdered milk
- 1/3 cup brown rice flour
- 1/3 cup whole wheat flour
- 4 teaspoons ground wheat germ
- 5/8 cup honey
- 2 teaspoons ground flax seeds
- 1 cup unsalted natural-style peanut butter
- 1 tablespoon vanilla or maple extract
- 1 cup whole almonds
- 1 cup dried cranberries
- 4 egg whites
- 1/2 cup water (as needed)
- 8 ounces whey protein powder
Butterscotch Monkey Bread

In a bowl with a tight lid, combine pudding mix, sugar, cinnamon and nuts
- 1 package dry butterscotch pudding mix
- 3/4 cup sugar
- 1 tablespoon cinnamon
- 1/2 cup chopped nuts
- 1/2 cup butter, melted
- 3 (10 oz) tubes refrigerator biscuits
Pepperoni Pizza bread

Lightly grease tube pan. In medium bowl, combine parmesan cheese, oregano and garlic
- 1 pkg Parkerhouse rolls (thawed)
- 2 oz turkey pepperoni, julianned
- 1 cup parmesan cheese
- 2 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 cup butter, melted
- 1/3 cup pizza sauce
Pumpkin Fudge

Line a 9x9 inch pan with aluminum foil, and set aside
- 2 tablespoons butter
- 2 1/2 cups white sugar
- 2/3 cup evaporated milk
- 1 cup white chocolate chips
- 7 ounces marshmallow creme
- 3/4 cup canned pumpkin
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
Chicken Enchiladas

- 3 tablespoons vegetable oil
- 1 1/2 pounds skinless boneless chicken breast
- Salt and pepper
- 2 teaspoons cumin powder
- 2 teaspoons garlic powder
- 1 teaspoon Mexican Spice Blend
- 1 red onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen corn, thawed
- 5 canned whole green chiles, seeded and coarsely chopped
- 4 canned chipotle chiles, seeded and minced
- 1 (28-ounce) can stewed tomatoes
- 1/2 teaspoon all-purpose flour
- 16 corn tortillas
- 1 1/2 cups enchilada sauce, canned
- 1 cup shredded Cheddar and Jack cheeses
- Garnish: chopped cilantro leaves, chopped scallions, sour cream, chopped tomatoes

- 1/4 cup granulated sugar
- 1/2 chopped pecans
- 1/2 cup melted butter
- 1 cup brown sugar
- 1 oz package regular butterscotch pudding mix
- 2 tsp cinnamon
