Maple Glazed Duck w/Peppercorns

Roasting a whole duck!
- 3-5 pound duck
- 1 tbsp fine salt
- 2 cups maple syrup
- 1.5 tsp cayenne pepper
- 1.5 tsp ground coriander
- 1 tbsp szechuan (or black) peppercorns, cracked
- 2 tbsp soy sauce
Slowly Braised Lamb Shanks

Preheat the oven to 350°F/180°C
- Six 1-pound lamb shanks
- Salt and freshly ground black pepper
- 1/2 cup all purpose flour
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 5 tablespoons light olive oil
- 1 head garlic, halved crosswise
- 1 onion, roughly chopped
- 3 celery stalks, 2 roughly chopped and 1 finely diced
- 3 carrots, peeled, 2 roughly chopped and 1 finely diced
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 bay leaves
- One 14.5-ounce can diced tomatoes
- 1 1/3 cups dry red wine
- 8 cups lamb stock or beef stock

- 1 1/4 pounds trimmed boneless pork shoulder, cut into 1 1/2-inch cubes
- 1/4 teaspoon dried marjoram
- 1/4 teaspoon dried thyme
- 3 bay leaves
- 3/4 pound red potatoes, cut into 1/2-inch dice
- 2 tablespoons vegetable oil
- 1 large fresh chorizo, casing removed
- 1 medium onion, finely chopped
- 1 garlic clove, minced
- One 28-ounce can peeled Italian tomatoes, chopped and drained
- 2 chipotle chiles in adobo, seeded and minced, plus 4 teaspoons sauce

Directions: In a medium bowl, mash the avocados, lime juice and salt together with a potato masher or a fork

- 1 1/2 cups solid veg shortening, cold
- 4 tbsp unsalted butter, cold

- 1 small red onion, peeled
- 1 red chilli
- Pinch of ground cloves
- 1/2 tsp fennel seeds

- Green Paste:
- 10 oz fresh spinach, stemmed and washed
- 1/2 cup fresh cilantro
- 1/4 cup fresh mint
- Mince:
- 1/4 cup canola oil
- 1 -in piece cinnamon
- 8 green cardamom pods
- 6 whole cloves
- 4 garlic cloves, minced
- 2 -in piece ginger, grated
- 1 large onion, quarter and sliced 1/2-in thick
- 1 fresh hot green chili - crosswise cut into 1/2 in rounds
- 1 tsp salt (to taste)
- 1.5 lbs ground lamb or lean beef

- 1 red bell pepper, seeded and minced
- 1 red chile, seeded and minced
- 7oz cremini mushrooms, seeded and finely sliced

Restaurant Style. Just like ordering take-out!
- Marinade:
- 3 whole boneless chicken breasts
- 2 tablespoons light soy sauce
- 1 tablespoon cooking wine or 1 tablespoon dry sherry
- 3 drops sesame oil
- 2 tablespoons flour
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon vegetable oil
- Sauce:
- 1/2 cup water
- 1 cup chicken broth
- 1/8-1/4 cup white vinegar (depending on how sweet you want the sauce) or 1/8-1/4 cup rice wine vinegar (depending on how sweet you want the sauce)
- 1/4 cup cornstarch
- 1 cup sugar (we use 1/2 cup sugar but the orginal recipe called for 1 cup)
- 2 tablespoons dark soy sauce
- 2 tablespoons sesame oil
- 1 teaspoon chili paste (or more)
- 1 garlic clove (minced)
- Frying:
- peanut oil (3 1/2-4 cups)
- Serving:
- 2 tablespoons toasted sesame seeds
